for the ppl that dont want to eat a raw egg. you can boil an egg at 140°f (60°c) for 3 1/2 min to pasteurize it. it will still look and taste like a raw egg.

The presentation of that bowl is amazing, the slightly pink center of the beef contrasts really well with the golden-orange egg yolk and the rich green of the asparagus. If that bowl tastes even half as good as it looks then it'd be more worth it than a lot of things I eat on a daily basis. Makes me wish Wagyu was more accessible to lower-income people like myself, I've heard wagyu is to beef what Ferrari is to automobiles, with a proportional jump in price to match, especially for people outside Japan thanks to the cost of transporting it.

Thank also for the suggestion regarding the flavoring the rice. Since there are so many different types of rice, perhaps a rice special might be interesting. Do the Japanese use a standard type of rice or there different types of rice that are used depending on the type of dish you make?

Thanks Champ! I also use the Sous Vide to make Gyudon, and I have also tried making Okayodon with some success. I have found that I don’t need to pre-cook the marinade, and in fact the flavor from the Shoyu contributes a richer flavor when just cooked at the lower temperature. I just pour all the ingredients shoyu, mirin, dashi/hondashi etc. into the bag. I marinate over night toss it into the bath, quickly pan seer after with onions and 😋 Donburi 💣 !!!

I had something like this not too long ago! I used A5 wagyu so I needed even less stuff! Instead of sushi rice, I cooked mine with a quarter cup of sake and used a steak dipping sauce that was one part yuzu ponzu, one part water, honey to taste. Beef quality is of utmost important to this dish, the better the beef, the more delicious the donburi! I didn't even need oil because the steak was so fatty it could sear in its own fat.

100% going to give this a go! For future videos have you considered putting you personal spin on foreign dishes? Like a Japanese spin on Fish and Chips, Bratwurst etc (cant think of other dishes at the moment but im sure other people have plenty of suggestions) i would enjoy trying a well known dishes but with different flavour profiles and of course healthier (if possible) ;)
