No answer from chèf,probably he doesnt know English. Saya pakai maezena tapi sebaiknya terong yg sudah dilubangi di kukus sebentar, karena biarpun sudah digoreng lama tapi masih keras juga. Lain X saya coba ditabur garam biar lemas,diam kan 15 menit, lalu bilas dg air dingin baru digoreng. Good luck

I will soak the cut eggplant in salt water so the eggplant not became brown, before chopped it up.but thanks for receipe, I love eggplant, love from California.
