We do not know much about Spartan cavalry, we know that it existed but it was not much. Thessalian was very popular for their cavalry. Before 500BC there wasn't much cavalry around, it was almost none existed, the reason for that it was that would increase taxis, in ancient Greece there was gathering in agora importart discussions would take place there by the The ecclesia or ekklesia wich was the assembly of the citizens in the democratic city-states of ancient Greece it was open to every citized that was older that 20 years, so they had talk those stuff, for cavalry you need stables and money for horse breeding. In Sparta they had Apella wich it was similar to ecclesia or ekklesia. Also something that was very important is that there was no professional hoplite army, it was more of a hoplite association to join that association you simply had to take your fathers weapons or buy some new. So during the Greco-Persian Wars and the Peloponnesian War there was no professional army.

The temple you have been wondering about is indeed dedicated to Athena. I mean, this Acropolis is of course simplified but that building certainly meant to represent the Parthenṓn - the temple of Athena, the Victorious or maybe more like a treasury with an altar dedicated to Athena.

The Spartan Royal Guard was at one point an all cavalry force, so at one point it was stronger than historical common knowledge. After that, a Spartan army was virtually entirely infantry. Hoplites mainly, eventually pikes as well after Macedon revolutionized it. Very few skirmishers, very few cavalry. And what cavalry they did have was dedicated to running down routed men.

player of macedon could have had pathfinding issues. I'm having them as well. units who attack in collum formation even when specifically ordered to stay in a spread out line formation. and sometimes units don't listen when trying to give them new orders

You need to spread them out in a line before charging/attacking. If already engaged, take them off of formation attack until you get a moment to fix it and then turn back on.

The Macedonia player threw that battle so hard, not only did he mess up his push on the left but when Sparta needed him he did nothing. Sparta played it great at the end but Macedonias cav did absolutely nothing to help, I don’t if he could have messed up more

Spartans refused to use cavalry for centuries. Even if they existed, they were used to get to and from battles and mostly scouting. They did adopt cavalry post Alexander era. It wasn't that effective.

Tortoise are cheap. When I host siege battles I ban them. You have to use proper catapults, rams and towers to attack a settlement. The way it should be.
