I grew up in the restaurant business but feel like I learned how to cook while going to college and watching Molto Mario, Hot Off the Grill w/ Bobby Flay, and East Meets West w/ Ming Tsai everyday.

My YT algorithm has been suggesting a bunch of videos of Japanese Yatai restaurants in places like Fukuoka. Someone needs to figure out how to do a US version of that - not necessarily the sidewalk aspect but small/intimate/chef cooking directly for customers/not necessarily fancy - where chefs like Dave and Bobby can cook once or twice a week to scratch their itch. They have so many other avenues to make a living that are less stressful than opening a big, new restaurant (and all the buzz and expectations that would come with that).
