In this video I'm raising the awareness of the loss of coastal land due to erosion, and give you the information you need to help turn this around before we lose our land and a very key species that all sea life depends on. Also in this video I prepare a Oyster recipe that you will absolutely love, that is so rich in flavor, but yet so easy to make. Please watch the video and see how I make my own version of a classic oyster recipe.

Rus's Charbroiled Oysters
24 Oysters
1 cup chopped baby portobello mushrooms
1/2 cup green onions
2 Tablespoons chopped chives
6 slices of cooked bacon, and then crumbled
2 diced up artichoke hearts
2 cups chopped fresh spinach
3 tablespoons of fresh chopped parsley
2 teaspoons of chopped fresh garlic
1/2 cup of Absinthe
1 quart heavy whipping cream
1 tablespoon of Worcestershire sauce
10 ounces of grated parmesan cheese (Aged is better)
1/2 cup of Panko bread crumbs
Fry bacon till crispy and set to the side. In bacon grease, add in mushrooms, and cook for a few minutes until mushrooms start releasing their water. Add in spinach and cook till they begin to wilt, then add in green onion, chives, artichoke hearts, parsley and garlic. Cook for a few minutes, and add in Absinthe, and simmer another few minutes. Now add in heavy whipping cream and Worcestershire sauce and let simmer until reduced by 1/2. After the sauce has reduced by half, add in parmesan cheese, and Panko bread crumbs, and add crumbled bacon. Mix well. Take the oysters that are on the half shell, or other cooking utensil made to cook oysters in, and top with sauce, and cook on a grill until everything is bubbling and the oysters plump up. I toast the top of mine with a "Creme Brûlée torch" after removing oysters from the grill. Serve with slices of french bread and enjoy!

Rus, first there is just nothing like your videos anywhere. The recipes that you create and come up with are in a league all their own. Such a decadent, scrumptious dish. those oyster look wonderful, you could not make enough if I was there, will check out the oyster bed, the Chesapeake bay has a similar, and the are starting to protect the oysters because they help the bay so much, as always thanks for sharing

Rus I am square in the oyster-lover camp. I've been meaning to do some grilled oysters, and this is the recipe that we will follow. Very interesting product, I can see the benefit of pulling some of that moisture out into the bottom tray. Thanks for sharing this!

Thank you Angie! I was raised on oysters, and there are many ways to cook them, and they are also eaten raw, which I love. There are two kinds of people in this world. Ones that love oysters, and the others hate oysters. To me they are just simply delicious, especially in a rich sauce like this, and the flavor of the oyster lends a fantastic flavor to this sauce. This is fit for kings :)

Man that looks awesome Rus. What a great company and an awesome mission. Those oysters look great. I'm going to check out the oyster bed web site. Oyster habitat is disappearing all over the gulf and along the east coast. Runoff from agriculture has played havoc on these beds. Thanks for educating folks about our disappearing oyster habitat.

Dang man. I just discovered your channel a week ago. I already made the cajun stuffed shrimp, bbq ribs, and tomorrow on July 4th, I'm doing your method for low country seafood boil. I will order this oyster bed tray and grill some oysters next!! If you find it difficult to obtain Absinthe, you can use Pernod, or even Ouzo.

Same here Joe, this was kind of a wake up call for me since I live right here on the coast. Man, you will love these "Oyster Beds", and the cool thing is, you can cook all sorts of things on them. Brother, I love Crystal Seas, and I especially love Pass Cristian Oysters! Can't beat them anywhere.

Great story rus its nice to see someone take a stand on this issue. We have battled our own demons with oysters in the Chesapeake bay. at one point they were so prevalent the reefs would define boating channels and almost pose a navigation hazard for boaters. Now there almost non existent, over harvesting, runoff causing falling salinity and disease have all but killed them off its sad. Anyway awesome cook brother it looked delicious send me a plate up here would ya..love me some oysters

Thanks Jerry! I don't think many people understand the impact of this, so I was more than happy to help spread the word about this on going problem that affects all of us in one way are another. It's a shame that things get so far out of control before someone like The Oyster Bed stands up and does something about it, and raise an awareness to get many involved to help find a solution to this problem. :)

Your sauce looks like a killer soup. The oysters ... outstanding. I love Mississippi Oysters, to me they are the BEST. I have a friend that lives behind the Treasure Bay and I have had Biloxi oysters a couple times. I want to be in Heaven, so I must try this. There is a place close by that has Biloxi oysters, he drives down there twice a week and has a shoppe and sells the seafood.

Thank you Kelly. Oysters done like this are just simply delicious! For people that don't like oysters, this sauce would be great on pasta as well. Yes, I really appreciate the effort these guys are putting into our oyster estuaries to help get a handle on a big on going problem. Thanks again Kelly, and have a great week :)

Hoo -aww!! Mighty fine video Rus! While I'll be the first in line for an oyster on the half shell with a bit of lemon juice or spicy cocktail sauce (and an ice cold vodka), I have done some oyo's on the the grill and oven in different ways - white wine, bacon and spinach,cayenne,Parm, etc. but none near as decadent as yours, and I mean that as a compliment! So rich it looks, I don't see how'd you'd have the belly space for much more after this dish! And thanks for the alcohol lesson, I didn't know that absinthe (spelling varies) was available in a non-lethal form :) , and even though I know that liquors with a licorice/anise flavor, such as Pernod, are a classic seafood addition I've just never been fond of that flavor. More horseradish, please! Finally I want to thank you for your info by the Oyster Bed Guys and your ecological commitment. It was worth the time to know that the very creatures we eat and the part we routinely discard can contribute to a sustainable source, I really didn't know that shells could produce more oysters if recycled properly. I'd just hammer them shells and toss them in the garden. Seems it's better to return them from whence they came. Bravo, Cheers, and Salute Brother!

Thanks Randy! Brother, there isn't much that I love better than to belly up to about 2 dozen raw oysters with lemon and cocktail sauce with extra horseradish and lots of cold beer in the bottle. That is my favorite way to eat oysters, but with that said, these are so rich and delicious, and the sauce is seriously to die for (Figure of speech ;) I'll be totally honest about the Absinthe. When I poured that 1/2 cup into the mix, and the smell of licorice hit my nose, my first thought was "I just screwed this recipe"! But in good faith, I continued with my plan, hoping that this was going to mix and mingle with all the other flavors to produce what I was imagining, and brother, let me tell you, it was just pure heaven in flavor, and no licorice flavor or smell was present, but I know that it had a lot to do with the final flavor of this dish. So I guess ole Jules Alciatore (son of the original proprietor of Antoine's restaurant in New Orleans) knew his stuff. Randy I think we all learned something about oysters from "The Oyster Bed" I live right here on the Gulf Coast and didn't realize the size of this problem. I just buy and eat. They are raising the awareness, and they got me in their corner for sure ;) Thanks again Randy! I love reading your comments :)

Everything you make is top-notch but never pretentious with simple fresh ingredients. Do you recommend a company /website that will deliver oysters to the northern east coast by chance? I have been watching your archive of old videos! I'm addicted...lol

I'm sure there are companies that will ship oysters, but I really can't recommend anyone in particular because I have never had to order since I can get them locally, but maybe a search online will help you find a reputable company to order from.

How do Ya know when an Oyster is done ? ? When Ya slide it out of the shell into your mouth...That's when it's done !! LOL ! This is one fantastic recipe that I have to try !! Thanks for sharing !

Russ, you're torturing us lol!! I have tried the "Willow Point" oysters and they taste awful. This is so yummy here. I like this idea a lot. Could you just use this mixture as a soup?? I love oysters by the bushel on the half shell raw. 😊😊

Great Video! Love to try the Oyster Beds but have a question, they look to be made of Cast Aluminum, are they? And how hard are they to clean up the stuck on food after the cook?

Thank you, I appreciate it! The Oyster Beds and the new Steak Beds are made from Armetale which is made up from 10 different alloys and aluminum is one of them. It is not cast aluminum. Armetale is safe to cook, bake, broil, grill, chill and use for serving and will not break. The clean up is easy, but I normally apply a thin layer of cooking oil on the surface prior to cooking to insure easy clean up. Hope this helps.

Wow! These look great! Thank you for sharing the Oyster Bed product. I will have to order it for Christmas. Unfortunately, I live in an apartment so, I am unable to grill. Would you be able to advise if this recipe can be done in an oven and if so, what temperature and for how long?

+Darrin T 350 degrees in a oven should be just about right. You will have to keep an eye on the oysters to determine when to pull them out. When they begin to curl which only takes a few minutes, take them out. I love the oyster beds :)

I 100% understand the story from the oyster beds etc but i can't imagine those oysters out of plastic package to be as good as right out the shell

These are local and freshly shucked oysters, and there is no difference in taste or texture than from straight out of the shell, however there are some companies that ship nationwide and they use a pasteurization process for safety reasons, and those do taste different. I will not buy those. Buying these oysters are no different than buying fresh fish or shrimp from a local fish market that have them on ice, compared to buying them right off the boat or catching them yourself. They simply did the shucking for you, and charge accordingly :)

Should we quit buying unshucked oysters? Are you going to make all the other stuff they show in their video? Thirdly, his much for that tub of oysters you were using? They are like $40.00 to $60.00 around here...

Sapo, they are encouraging people to buy more pre-shucked oysters, so the shells can return to the estuaries to help prevent the killing off of our oyster reefs. Restaurants that use a large volume of oysters could easily buy pre-shucked oysters for their recipes. There will always be raw oysters on the half shell, but for oysters that are cooked like in this video, in would make a huge difference if people would go with pre-shucked oysters. I do plan on cooking other things in the oyster beds, and the tub of oysters I used in this video was $11.00 I can buy the large one which is a little over 2 dozen oysters for around $22.00 These oysters came from Pass Christian, MS Some of the best oysters you can get.
