The oyster bar near me has a cool story. It started out as an oyster farm but as they got bigger the owner ended up buying a dockspace for workers to use. The space had a rundown restaurant on the land, so he ended up turning it into a restaurant to sell the oysters. They did really well and now its like a 5 star restaurant with a weeks-long waiting list out in the marshes.

Even in these short videos, Gordon shows he's much more than just that "screaming chef" for which he's (in)famous. He is intense. He listens intensely, is intensely enthusiastic about food, intensely empathetic towards customers, and cares intensely about the processes of preparing food. I've learned a lot simply by observing his mannerisms in different situations. He's one of the most engaged listeners I've ever seen. If I go to a new job or if I'm in a position where I'm gathering information, I try to emulate his behavior when he's listening and taking in as well. Notice how little input he gives, besides affirmations, questions and short recapitulations. When he gets to try an oyster, he doesn't do what many TV-personalities do; "look at this, big, creamy, that's perfect, wow, tastes fantastic, there's so many of them here, look right here..." - no, just a simple "wow...", and he lets the other person take the initiative again. This, to me, is what separates him from his peers; he can be the most intense leader with abrupt and even abrasive communicative behavior, but he can also put himself in the most extremely passive, listening role when the situation asks for it, and let the expert and his food do all the talking for him.

@@r0bz0rly Recently moved to New England. I am not exaggerating when I say it is 90% because when I was traveling around the area (Rhode Island, Massachusetts, New Hampshire, and Vermont), I had to struggle to find a bad meal. And yes, the seafood in the coastal towns is as good as it looks. New Bedford scallops are my personal favorite.

I can't get over the story he told. I'm not sure most people watching this understand just how lucky Adam is. He basically accidently introduced oysters to a near perfect environment for them and created a goldmine for himself out of nothing

@@billfred9411 Right!!??!! I know of a law suit in Washington in which $100,000s were spin litigating a claim between a tribe and other land owners because the land owners spent thousands upon thousands to improve an oyster bed. There is a down side to oysters in Maine. They are an invasive species and they do damage the natural river bed. They also out compete other native bivalves. But they are very tasty. I recommend the ones that come from the Damariscotta river in Damariscotta/Newcastle.
