Mr Charlie, this reminds me of my mother in law, I was her prep cook and she would mix it and bake it, she's gone now and her two daughters were career women and don't cook, so its on me but I still throw down in the kitchen, I clean the kitchen first, then I wash up like a doctor, then I do what it do! omg, I made the cornbread two days ago to go with my hubbys cabbage, and it was wonderful but because its only me and him, we could only eat 1/3 of it before we were ready for something different, so today I took the remaining 2/3 and now I'm making dressing and Cornish hen. Your awesome, you need to be on Foodnetwork making nothing but soulfood, Foodnetwork need a little color to the team. Sunny cant do it all.

I'm so happy I found this wonderful human being. Charlie seems to be very humble. I recently moved from my hometown, New Orleans and came to Shreveport. biggest mistake ever. I can't find the Chef K seasonings any where or the Patton's hot sausage. I miss New Orleans!!!!

You can't find none of chef Paul's seasonings up there or the hot sausage. I believe there's a website you can go on to purchase these particular ingredients BUT it can be expensive!

I love fresh sage in dressing! We had two sage "bushes" when I was growing up and it went into cornbread dressing at Thanksgiving. Bunches of it used to hand from the attic rafters for drying and was used to season home made sausage. Sage causes some people to hallucinate mildly.

hard to believe the beloved chef Paul has passed :( here on coastal so calif I never find huge packs of necks like that nor any of the smoked turkey parts that make such good seasonings...this looks like a very flavorful stuffing gizzards make such delicious stock can only imagine adding necks..love munching on necks there might be nothing left to put in stuffings :) i enjoy his videos

Yes adding the chicken necks is like ah one two punch! Very good! :) Yes don't eat the chicken necks after they are cooked. You'll eat them all before adding to your stuffing! One trick I use is throughout the yr when I make cornbread whatever is not eaten I I freeze and use for my dressing for Thanksgiving. Also since I use jiffy I make sure I make a pan of cornbread from scratch without sugar so it won't be too sweet.

I just use a large pack of turkey necks for the stock and dressing. There's more meat on them and it's easier to pull off. Dang. Now you've got me feenin' for some dressing.

Can't wait 'til Thanksgiving & Christmas. I make my own turkey stock also but I use the neck, gizzards & liver & cut up fine & onion, garlic, sage, salt & pepper to my stock. I also use Jimmy Dean's but I use 2 chubs of the Jimmy Dean Hot Sausage. Now I'm craving stuffing lol!!
