I think you might have mis-read the thermometer at the 15:08 minute mark. It looks like it's showing 170 degrees, not 165. So you should be able to shorten the entire cooking time by at least 10 minutes. I'm just curious how juicy the meat was after you cooked them to 180 degrees. Anyway, I've often thought about buying Cornish Game Hens at the grocery store but I wasn't sure what to do with them. So this helps a lot! Thanks again Charlie!!

I show the insides of every part of the hen after it was baked to show it was thoroughly cooked. Also, cooking and internal temps vary depending on the size of the hen, your baking pan and your oven. I'm happy to hear that this video helps. You're welcome, not a problem!

Yup. It'll probably be just me for Thanksgiving dinner and that's what I'm doing. Game hen with stuffing and a couple sides. Thanks for the video. I've never cooked one. I have some thick cut peppercorn bacon that I'll put on the hen while baking. Add a little flavor and hopefully help keep it moist

Aloha. As an immigrant, traditional thanksgiving dinners were considered boring. We did goose. I love Cornish game hens, though I haven’t made them in awhile. People under appreciate them.
