My neighbor recently had hip replacement surgery, and being I’m a NOLA native, I had to bring her some GOOD fried chicken. I used your recipe and made a double batch (had to keep some for myself) . Brought it to her and she’s told the entire neighborhood about it. Everybody now wants some, SERIOUSLY! Charlie, you’ve OUTDONE yourself on this fried chicken. There are so many of your recipes I use. It is one way I stay connected to my hometown…I miss New Orleans SO bad. So, all the way from Houston, a HUGE thank you. 🙏🏽

That chicken looks amazing and I'm sure it tasted great! A trick I do to keep the oil cleaner is to allow the flour to adhere to the chicken before frying, after dredging in flour, place chicken on a rack and wait about 10-15 minutes until the flour looks 'wet', this extra step keeps the flour on the chicken and will not disperse in the hot oil.

I absolutely love fried chicken I use the whole organic small chicken I cut up. I have never tried dipping it in egg. I use all purpose flour seasoned with salt and pepper and I season the chicken with salt and pepper as well. This is how I was taught to make chicken when I was learning how to Cook. Simple yet delicious. Yours looks delicious also. Just might inspire me to try a new way. The crunch was the best. All that’s needed is some potato salad, baked beans and a dinner roll. Yummy my favorite meal. I just might have to fry some chicken this Sunday.

@@CharlieTheCookAndrews Thanks so much for your reply!!!!!! So nice of you. Really appreciate your work. P.S. - Do you have any videos preparing a dish made with potatoes? That's a staple food I really love that I want to pair with a good protein (short rib, baked chicken, pork chop etc...).

I cannot wait to try this! Looks absolutely awesome. Oh, and a quicker way to check the seasoning (instead of frying one piece of chicken to test), take that piece of skin you chopped off the thigh, coat it and fry it up. It'll only take a moment to fry. Plus, you'll never throw away any excess skin after you try this...
