I really like that his kitchen is spotless clean, his cookware he uses and even well manicured nails! I've seen some female cooks with chipped nail polish and their kitchen needed to be cleaned up Before they try to cook anything! Charles does what l do, clean up and put away my cooking spices, clean off my countertop while the food is cooking, and therefore less cleanup when everything is done! He is an awesome cook!

agree! This youtube was extremely well done. Very useful and highly respectful of his audience, speaking slowly and clearly! Oh, and BTW, the result is delicious. I like my catfish with more zing and less lemon, so I add red pepper flakes to the seasoning blend. And, allow me to suggest this tip- use fresh garlic! Garlic powder is just not a substitute for the real thing! IMO! Thanks for sharing this recipe with us, Chef Charlie. Yep Makaila, we do too. Charlie's recipes never fails. Such a God given talent for taste. And we also appreciate the time he puts in to give us these perfectly seasoned and or moist dishes. He gives an A+ effort in everything he does from cooking, talking etc. and that alone I appreciate. When watching him I'm reminded of what my mom told me growing up. No matter what you do in life, do your best, do it right. So if you're picking up trash off the ground, do it well. Not really. I eat Catfish plain as is. Some people eat it with Tartar sauce.

A quick tip I learned recently that really works: Put your lemons in the microwave for 10 secs and then juice them. It helps them give up more juice. Teach on Charlie!
