Mistake on recipe video. Use 1 1/2 pounds 4 catfish fillets altogether. You can increase to 2 pounds which will increase the number of catfish fillets by 2 if you want to serve more people. Sorry for the confusion.

Just found you and this video. Excellent! I've been making blackened fish for years, but you just gave me an excellent new tip: Apply some seasoning and lemon and let sit for an hour or more before cooking! I've never considered that. Just did that with 5 fillets and I can't wait to test the results! I will offer a couple small suggestions that might help some folks: First, if your cast iron isn't as wonderfully seasoned as Charlie's, you need to use some non-stick spray or a little oil. Otherwise, your fish WILL stick and tear apart when you try to turn it. Second, unless you have as light a touch as Charlie, don't use metal utensils with cast iron. Use plastic or wood. Finally, unless you have EXCELLENT ventilation like Charlie, don't try to cook this indoors! Instead, fire up your grill and cook with your cast iron outdoors. Some blackening seasoning produces a tremendous amount of smoke, and mediocre vents will NOT prevent your smoke alarms from going off! lol. Hope that helps someone with less experience than Charlie here - a man who clearly knows what he's doing!

Looked real good. Blackened is my absolutely favorite way to prepare catfish! Granted, I like fried and grilled catfish, and catfish court-bouillon all well enough, but blackened is best! Great video of a delicious dish.

I recently picked up some already seasoned blackened tilapia that was ready to cook. I just really needed or wanted to know the heat range and after looking at several blackened tilapia videos became frustrated that the heat setting was never discussed. Hey Charlie when you mention the cast iron skillet being season what seasoning what I put in there to do my catfish

Hey there. Seasoned meaning the skillet is coated with oil and baked into the skillet, creating a non-stick surface. You can spread a very light coating of oil into your skillet, then preheat fire, let the skillet get hot, and then add the catfish. Hope this helps. Thanks!

I soak them in buttermilk before cooking because I catch them myself and the wild ones eat all kinds of stuff that gives the meat a muddy if you don’t soak it out of them.
