Chatkhara Phulki:
Ingredients
Boondi 1 packet of ½ kg soaked in hot water for 30 mins
Whipped curd 1 kg
Ingredients for Green Chutney
Corianderleaves ½ bunch
Green chilies 6
Garlic ½ tsp
Roasted&crushed cumin 1tsp
Mint leaves 6-8
Salt ½ tsp
Sugar 2 tbsp
METHOD FOR CHUTNEY
Grind all together to a fine paste.
Ingredients for Temper
Whole red chilies 4
Curry leaves 10-12
White cumin seeds 1 tsp
Mustard seeds ¼ tsp
Oil ¼ cup
METHOD
Beat yogurt, add in grinded hara masala, mix well, add in soaked boondies, give baghar and serve.
Sewaiyyon Ka Caramel:
Ingredients
Vermicelli ½ cup
Eggs 4
Sugar ¼ cup for caramel
Caster sugar ½ cup
Vanilla essence ½ tsp or cardamom powder ½ tsp
Clarified butter ½ tbsp
Milk 2 cups
METHOD
Pre-heat oven, melt sugar in a non stick pan till caramelize, beat eggs for a min, add in ½ cup caster sugar, cardamom powder and whisk, pour caramelize sugar into a pan, heat ghee, fry the crushed vermicelli till lightly golden, add milk, mix well, cook for a min or two till milk is just warm, strain the vermicelli and place them in the mould, add the egg mixture to milk and mix, pour the mixture over vermicelli, bake for 35-40 mins over water bath, remove, cook, chill for 6-8 hours overturn, serve chilled.
Tikka Stars:
Ingredients
Puff pastry 250 gm
Ingredients for Filling
Chicken tikka shredded 1 cup
Cream cheese cubes 4
Capsicum ½ chopped into tiny cubes
Sweet corn ½ cup
Egg 1 beaten
Sesame seeds 2 tbsp
METHOD
Roll puff pastry into rectangular, cut with star shape cutter, fill with filling, cover with another star, seal well, brush with beaten egg, sprinkle sesame seeds, bake on 190 D for 20 mins, serve hot.
