This recipe is inspired by one of my new favourite vegetables: Chayote squash! Crunchy, juicy, with a subtle sweetness that works well in so many applications especially in this salad, which is a variation of the famous green papaya salad! It's got a refreshing crunchy feel of a slaw that will go great with any meal, especially richer ones. Enjoy and let me know how else you like to use chayote!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Chayote which we call Choko (pronounced like cocoa) in Australia used to grow in my backyard as a child. It was awful, but now I realise this is probably more to do with how it was prepared and the resulting consistency. My mother used to boil it and it was just gooey, tasteless mush. It was however plentiful and free so I used to get a lot of it. I swore 35 years ago I'd never eat it again. For these reasons I approached this salad with some trepidation. OMG, it is fantastic, delicious and filling. Last night I had it as a meal. Tonight I will have it again as a side to some BBQ lamb. It is very easy to prepare, although mine did not look as pretty as the original, this one is a keeper and you have changed my opinion of the humble Choko forever. Thanks!

hi greetings from sunny Trinidad & Tobago down here the Chayote squash is called christophene used manly in soups and stir fry and always peeled..... anxious to try this recipe good job on another awesome recipe

I bought chayote on a whin in my local thai shop in Sweden today. First time I ever saw it. Made this and it was excellent. I've had this dish in Thailand but back then I assumed the fruit was some kind of green papaya.

Huh? The "sayote" don't have resin? In philippines it has. I like chayote, i like apple niceee😆. I made a great decision choosing thai food and this channel wow☺💗💗

This looks good. I've only had chayote in soups & stir fry dishes. I've never had it raw like this. I'll have to try this out.

I love chayotes. It's quite popular here in Brazil. I love eat it roasted, but we remove the skin here, because Brazilian chayote's skin have thorns.

Hi! I'd say you can leave it out. I was making this recipe before without dried shrimp(because I live in the middle of no where and Asian stores are so far away) and I finally made a trip and bought some and used them and I personally don't like the flavor they add! So now when I make thai salads, I leave the dried shrimp out actually haha. My personal taste, but I hope it helps you!

Hi Pai, I stumbled upon your channel a few months ago and absolutely love your recipes..! I'm Australian Chinese and I think we call Chaytote - Chokos We use it to stir fry and I remember as a child peeling the Chokos first and I remember there was a slight stickyness after the vegetable was peeled and sliced. Does the Choyote have same sticky texture. Would this affect the salad? I also know they use them as commercial Apple Pie fillers in frozen pre packaged apple pies in supermarkets as the cooked texture of them is exactly the same as apples and they have no taste so they take on the apples that are in the mixture. +oopsiespeedy interesting re: apple pie filler. I don't think chayote needs to be peeled at all, and there is usually a little bit of stickiness after cutting which is normal for many types of squashes, but it doesn't affect anything. You can't taste or feel it in the dish.

Chayote is call Su su /soo-soo/ in Vietnamese. I happen to find them in Japan. Woohoo!! Now I can actually make something authentically!!!

how long do these salads keep in the chiller? or should we always mix this just before serving?

you can mix salad dressing and prepared all ingredients in advance. and keep in the fridge.(6-12 hour is ok)

I think I can actually use the same sauce base for that recipe. it would work. It's similar to the Papaya Salad Son Tam actually.

I recommend boiling chayote because it is soft and seed is edible when boiled.

I think, It could be applied with KORABI replacing CHAYOYE too. Korabi is crunchy, and having flavor like radish.

I can't lie. This salad is fukkin awesome. I made it today an wish I would of doubled the yield.. great job. I will be researching other Thai recipes. I don't wat much meat at all son in will be looking for Vegetarian style diahes. Thanks a lot. And. BTW. You look good too boo..

+Yee Teng Low It's not fish oil I used, it's fish sauce. You can use soy sauce (but the flavour is very different) or I guess you can mash up some anchovies too.
