The Salmon you showed in the video is not wild, it is Farmed Atlantic Salmon which is raised in net pens up and down the coast. You can easily tell because it has the marbling. The red color can be anywhere from light to dark depending on what they are fed. For good Wild Salmon, look for Sockeye Salmon which should be a bright solid fire engine red in color.

Avoid eating farm raised Atlantic salmon raw. that light pink with marbling means it was farm raised flashed frozen salmon.

All the salmon you ate are farmed Atlantic Salmon....nothing related to the Pacific coast nor out rivers.

They're called "California rolls" because they were first made for visitors from California.

Nat faul you are correct. If I may I would like to add to your comment. Japanese Canadian resident Chef Tojo, from Vancouver, made this comment. When he has visitors from California, he would make California rolls for them. Goose nuggets, your close but no cigar. You were probably misinformed. The California roll was invented in the 60's in Los Angeles California. The original California at that decade did not have the same ingredients we see now in our current day. It was also wrapped originally with the seaweed facing outwards and the rice inwards. By the 70's the ingredients started evolving with numerous substitutions. During this decade the first ever printed articles about this California roll, was printed. Then when the 80's came, the California roll was in full hype. You can't escape North American sushi without the iconic California roll. Vancouver Chef Tojo is only wanting to claim "his version" of the California roll. His "invention" is the uramaki, the inside out California roll, with the sushi rice and sesame seeds facing outwards, while the seaweed and ingredients are inwards.

Sorry forgot to mention also, A few years ago, Chef Tojo received recognition from the Japanese Ministry of Agriculture, Forestry and Fisheries for his uramaki version of the California Roll. Chef Tojo was awarded goodwill ambassador for Japanese cuisine. Vancity Rep Wooo!

My bad, also. I heard your friend in the background commenting on the Vancouver roll. We actually have a roll that was invented in Vancity. In 1974 Chef Tojo invented the BC roll. There are different variations of the BC roll because of how the salmon skin is prepped. But Tojo holds the original title.

amateurranconteur I would say kind of mixed amongst Japanese, Korean and Vietnamese mostly and some Chinese. Because Chinese would just open Chinese restaurants since there’s a large demand here.

K Rukawa Nice! Thanks for the tip. Yeah I would expect there are a few similar price range in the city, however, we also considered locations for tourists who don’t drive, that’s why we suggested these two restaurants :)

cfcreative hmm 🤔 you must be living some where nice. For some people even just to eat any kind fresh food is a privilege. I thought food and water in Canada is pretty decent. Restaurants serve tap water here and no one get sick :).
