We love you too, Lori! I am in a busy season of life with end of year activities plus we are moving into our new house. Our meal plan tonight is sloppy joes. I have chicken for the crock pot. I am cooking it overnight to make quick chicken pot pie and chicken tacos this week. It makes the week so much better when I plan ahead.

Pressure canned homemade beef/veggie soup or chili is our go to. I also have canned hamburger that makes spaghetti or taco soup so quickly. Our super fast meal- hot dogs sliced & browned, add that to baked beans with a touch of brown sugar. Great lunch

Thank you for another great video. I started keeping a white board list of possible dinners in my kitchen about a year ago, and it has really made a difference in reducing takeout. Now it's a once-in-a-while treat, not even weekly or monthly! I am looking forward to making some carrot salad this weekend!

The small than your pinkie carrot can be three things that I can think of, off the top of my head- 1. It might be the variety. I had some carrots that were naturally smaller and I grew them in pots. 2. Carrots, I believe, need well aerated soil. And 3. You Might be harvesting them too soon. Good luck with this year’s harvest! Go to soup recipes: chicken noodle, mushroom, pasta e fagioli kale and white bean and roasted cauliflower. I also like hand kneading my bread. I feel more connected to the food. Great recipes, Lori! 💖

Your home made bread looked delicious! Our boys are away at school so for now there are just two of us and I just made beer bread (we had a tenant move out of one of our rentals and leave behind cases of beer, I’m trying to find ways to use it up!) so I’ll have to wait a couple of days. I’ve shied away from bread making because in the past my breads have been pretty heavy and dense, but this looks do-able! I’m also going to get brave and try carrot raisin salad. I don’t recall ever eating it but we do love carrots so it’s worth a try! I just love the homey chat and the honesty of your channel. Thank you so much for all you do!❤

We keep pressure canned beef, chicken and pork on the pantry shelf. It is so easy to pull together a meal in no time when we can just open a jar of meat. I keep a canister of Pioneer brown gravy mix on hand and some of that with a jar of beef shredded into it over potatoes, noodles of rice is very quick and delicious. The pork gets shredded with BBQ sauce for a quick meal. The chicken can be easily used for casseroles or soup or chicken salad in no time.

I love carrot slaw (no raisins as I am not a fan)! My grandma used to make it and so I love it even more because it makes me think of her. ❤ I love to have quesadillas or a clean out the fridge soup in a pinch when I don’t feel like cooking. Or a pasta dish with my home canned Italian sausage crumbles. So fast, more economical and definitely more satisfying than fast food! Also this is a trick I have been doing recently and it makes pasta nights even easier: I get a couple of loaves of Italian bread and slice it up, then I make a garlic butter and spread it on each slice, stack it all back together and put it back in the bag and freeze it. Then that is one less thing I have to do at dinner time, I just take out the amount I need, broil it and viola! Garlic toast!

Stir fry is really quick. I cut pork or chicken into bite-sized pieces and stir-fry it in my wok. I add a bag of frozen stir fry veggies and homemade stir fry sauce (soy sauce, vinegar, ginger, crushed red pepper, garlic, brown sugar, and cornstarch). I serve it over rice. I use brown rice, and this all comes together in just over 30 minutes. Homemade spaghetti sauce also comes together in less than 30 minutes, and pasta doesn't take long to cook.

What kind of food processor do you use for the carrots?? I love shredded carrots ❤ and am frustrated by using a box grater. Absolutely love making leftovers mashed potato soup for a quick dinner or lunch. Sometimes turn it into broccoli cheddar if I have stuff

I have a kitchen aid food processor. It works great and I got it at the thrift store. I am seeing a lot there lately. Also, the shredder attachment for the kitchen aid works really good. I think I linked that in the description.

You have 2 adults , 2 teens and a young child why not share the cooking duties ? Would your husband be willing to take on a weekend meal with help from your little guy ? Cheeseburgers cooked on a grill or in a grill pan, 2 bagged salads, and a side of an apple or orange. Your daughter's could each plan a simple meal and work together to cook it. A goal would be them .asking dinner for the family once a week. A. Making Bean Burgers adding in minced onion, and peppers can be frozen until they are needed. Just pull them out of the freezer and heat. B. Roasted Carrots are easy to make. Peel, wash, place in a bowl with seasonings and oil then place on a cookie sheet or oven safe fry pan and cook around 20-25 minutes at 350. Turning them once. While cooking cut up a Cucumber and Tomatos for a quick side.

That’s so funny you say that because I just talked to Kelsey about taking over some of the meal duties for the summer. They both enjoy cooking and do cook on a regular basis ❤️

Your biggest baked potato had green skin. Best not to use these for baked potatoes. This can cause gastrointestinal problems. Some experts recommend not eating the potato at all even if you peel it. I still use it and have not noticed us getting sick from a peeled green potato. Just thought it might be helpful to bring this to your attention. I will definitely try your BBQ potato meal.
