Made these tonight! Of course tweaked it a little, added a bit of tomato sauce, it was a hit. I made 1 pan of cheese and 1 pan of chicken, soaked the chicken in some of the sauce and assembled. Great recipe! 👌

I've noticed in TexMex flour tortillas are used more often. Love that you make them traditionally with corn. And you actually do a soft fry which makes them so good! You can also brush some oil on both side and put them in the over for a few minutes until soft then pull them out.

I have always made enchilada pie because I did not know the trick of oiling the tortillas first. Cheese Enchiladas may be my lifetime favorite food, so i will be cooking this. It's been years since I've used this mole recipe taught to me by my mom ♥️ it brought back many memories of stuff ground beef and cheese enchiladas. She also added sliced olives inside and for garnish. This same recipe was also used for chicken and mole

I just made this sauce. The first time I forgot to cook my flour all the way. I added all the spices and the water so I started it again. This time I cooked it all the way and cooked it for a while and it came out delicious. The first sauce I had used New Mexico chili powder and it was super red. The second time I used California and it came out lighter but delicious

Avoid using chilies or chili products from Hatch or most areas in New Mexico. For some reason, most all appears spicier, more picante, aka chiloso. We lived in So. Arizona for over 17 years. Most there, avoid NM chilies.
