Truvak T ... You know it’s Optional & every family has their own tweak. If you wanted your enchiladas to be spicy... then add jalapeños. I prefer without it. Also my mother’s recipe is quite similar to Raul. The sauce is exactly the same minus peanuts & jalapeños. Tortillas however are store bought & fried about 18 seconds. When done we dip the tortillas in the sauce & then add the shredded chicken & roll. Done. We always like to add crema & cheese Saul used with shredded lettuce on top of our enchiladas. Up until recent years I was baffled many use OVENs to make their enchiladas. But then again it’s usually Americans...

As a general rule, Flour tortillas have far better structure and are a blank canvas, and are much more better for Tex-Mex dishes like Quesadillas and Burritos. Corn Tortillas are softer and have a nuttier and earthier flavor and are best in dishes like Enchiladas.

Yes the real enchiladas from GUADALAJARA are better since this are NOT enchiladas, enchiladas dont have peanuts and the main thing is that they are fried in Oil is a tapatio traditional dish here in jalisco and this enchiladas are disrespectful to out traditional cuisine, but yea I understand its american version, but real enchiladas dont have that much Salsa and they are SOFT.
