Absolutely delicious is this pie with cheese, spinach and kefir, all placed in delicious layers between thin buttered sheets! After you taste it at least once, it will become your favorite recipe and you will repeat it many times!
The cheese and spinach pie in today's recipe can be compared to the Greek spanakopita recipe, but with its soft and tender texture, it is more like the Turkish burek (borek) recipe.

📌 Ingredients for a tray ~ 32x20x7 cm
400g thin sheets of phyllo pie (1 pack - 12 sheets)
100 g butter 82% fat
5 eggs
350 g Telemea or Feta cheese
150 g of cheese, Gouda, Cheddar, etc
150 g cream cheese (Philadelphia type)
450 g frozen spinach leaves (or 300 g fresh spinach)
1 small bunch of green onions
3 cloves of garlic
200 ml kefir
½ teaspoon grated nutmeg
½ tsp ground pepper
salt to taste (depends on how salty the cheeses are)
for pouring on top
2 eggs
200 ml kefir
50 ml of milk
a pinch of salt
3 teaspoons white and black sesame seeds

🔪 Preparation
1. If using frozen spinach, let it thaw, then squeeze it well between your palms. If you have fresh spinach, blanch it for 1-2 minutes in boiling water, then remove it from cold water, drain it well and chop it.
2. In a large bowl, grate the hard cheeses then add the cream cheese, finely chopped green onions, pressed garlic, beaten eggs, kefir and spices. At the end put the spinach and homogenize.
3. Brush 3 sheets of pie with melted and cooled butter. Place the 4th non-greasy sheet on top of them. Place the 4 sheets in a pan greased with soft butter. Pour in half of the cheese and spinach filling.
4. Again form a layer of 4 sheets greased between them with butter, which you place on top of the filling. Pour the rest of the filling, and place the rest of the buttered sheets on top.
5. With a sharp knife cut the pie into squares, as you want to serve it. With the tip of the knife, pierce the center of each pie square.
6. Put all the ingredients for the topping mixture in a bowl and blend with a hand whisk. Pour the mixture over the pie, insisting that it goes around the edges and corners. Sprinkle sesame seeds on top.
7. Bake the pie in the preheated oven at 180 degrees for 40-50 minutes or until it is well browned on top. For electric ovens - top and bottom heat, no ventilation. For gas ovens, use the medium setting.
8. Let the pie cool in the pan for 30 minutes before slicing.
