How to Make Cheddar Cheese!
Cheddar cheese may just be the most popular cheese in America, and maybe the most popular cheese in the world! There’s just something about the way it crowns a burger, or fancies up a bowl of macaroni and cheese. It’s love at first bite.
If you want to learn how to make cheddar cheese, then watch this video and set aside part of a Saturday to make it. It’s not a difficult process, but takes about 6 hours to get it into the first press. You will feel like an accomplished cheesemaker for sure!

When I was a young man out of school, I worked at a cheese factory. I was a driver to pick up canned milk from the farmers. On Sundays I would help another fellow drive up to Wisconsin with a load of different cheeses,mostly cheddar, swiss, and mozzarella. Love fresh made cheese.

Cheddar making is a labor of love. In factory, there is production scale. For someone who is busy, it’s still cheaper to buy it. But for hobbyists, this is a great step-by- step tutorial for a great piece of cheddar. Bravo!

I love learning new things. My grandmother taught me how to garden and can. My girls thinks it's a waste of time. I told them I thought the same thing when my grandmother taught me. But I'm glad she taught me. She said you never know if you will have resort back to these methods. And I tell my girls the same thing. I have got to find the stuff I need to make cheese. Because you know what is in it.

@@Cheese52 where may I find non chlorinated water? 😳 I've been afraid to drink water that's not been thru reverse osmosis filteration bc I have recovered from a brain tumor from contaminated drinking water. Now I'm going to make my own food bc I don't trust anyone after that experience.

@@kristinatidwell6563 Sorry to hear about your illness. To your water question: I use purified water from the grocery store. Other cheesemakers I know use distilled. You can boil tap water to remove the chlorine. Making your own food is a great way to control what you ingest, and I hope you find recipes that are helpful to you here.

Start with your own cow - and your own bail feed for her, and whatever you need for your pasture's down time, so you're not buying fodder. Then you have pure clean milk to work with. The quickest way to turn milk into a solid you can eat is with either eggs or maize flour and honey, any of which you can also grow at home pretty easily. If you want to get really classy, pour your milk and egg mixture over some home baked bread (growing and grinding wheat is a bit of work, but doable) sliced and spread with home grown butter and honey, and sprinkle some home grown dried fruit between the layers of bread. Then just bake it in the oven and enjoy! All of which is quicker and less work than making cheese - but cheese is tasty too, and stores the goodness of the milk for later use.

Well actually you don’t HAVE to age the cheese, and most store bought cheeses won’t be aged at all, which is why it molds and goes bad, the cheese made in this video will likely not go bad for months or years. Just a fact to take with you.

Oh my goodness! I will try to answer all of your questions. 1. Mesophilic culture is used for recipes that keep the temperature under 102F. They become stressed at that temp, and die at 113F. 2. Calcium chloride is used when pasteurized milk is used. The heat treatment denatures the protein and the calcium precipitates (falls out) of the milk serum. Calcium is needed to set a curd, so I add it back in. 3. Thermophilic cultures can handle temperatures much higher than mesophilic, so they are used when recipes reach temps over 102F. 4. Culture choice greatly impacts flavor, so recipe writers use different ones to create the flavor profiles they are after. 5. Yes aging absolutely changes the flavor, texture and aroma of cheeses. And different aging techniques will affect those attributes as well. For example, a natural rind cheese will be drier than a wax or vacuum sealed cheese made from the same recipe because it allows for vapor exchange. 6. YumYum is good! She is currently sleeping on the window sill.😺💤 Hope that helps! Lisa

Do you maintain the 100 degrees temp of the whey during the cheddaring turning process? I heard you say turn off the stove but is it turned back on when the temp drops below 100 degrees ? Thanks !

Hi Rosemary, Yes, so whey has a pretty amazing ability to retain heat, but if it drops below 100F you can turn the stove on to bring it back up to temperature. Lisa

I live in Nicaragua so don't know if we can get hold of Mesophillic cultures here, but I will try, as Cheddar is my favourite cheese. This is by far the best video I have seen on cheese-making, you make each step of the process really clear and easy to follow, and you let the process take centre stage, no ego getting in the way, it couldn't be better and I can't wait to watch your other videos, thank you so much.

Thank you so much! You could use cultured buttermilk in place of mesophiliic culture. Use 60 ml for 4 liters of milk. Hope that helps, and so glad you enjoy the channel!

Hello. I've watched over a dozen videos on how to make cheddar cheese at home, and I think yours is by far the closest to what I was looking for (in fact, the best and most enjoyable to watch). But your soft voice tends to make the viewer doze off :). Thank you for sharing ! WOW!!! After researching the food industry, I decided I would try to learn how to make my own butter, cheese, and bread. Pork is in just about everything we like to eat and now I know why we feel bad, even when we think we are eating healthy, it's crazy. This is a LOT of work, LOL, oh my goodness, but I'm glad I found you. It will take some time to learn and to purchase all the equipment, but my prayer is it will be worth it in the long run. @@nikelaloca8037 I'm not so sure about that. I can make pretty pretty epic lambic beers with lactic bacteria and sacro yeast. I've made few cheeses with success. Bread on the other hand... They are always so dense. I never seem to get a proper proofing. My sourdough plant looks healty. If I feed it, an hour later, it has risen almost to the bring. But bake a bread, and you have this square piece of dough that you can trow to kill a pig.

@@CraftyZA sounds like over-kneading. But sourdough is denser than regular bread. I youtubed" easy bread", and made a really good white bread first try. Maybe the type of flour matters... always sift.

Survivalist Hint: collect parmesan cheese packets from pizza shops, etc. When the SHTF, use a razor blade to ration out the cheese on a hard surface such as a mirror. Use part of a drinking straw or make one out of paper. One nostril at a time, insufflate a small amount sufficient to moderate cravings until regular cheese supply is resumed.

Traditionally it is wrapped in muslin which gets a little mould on it - improving the flavour. That way it also dries out more, becomes slightly more crumbly. Many English cheddars are aged for over a year.

This video was right on time. Just started cheese making and was so confused staring at the directions I had. I've only made mozzarella so far. You made it 1000% easier. Liked and subscribed. My tools are janky and my cheese press is a Chinese bun warmer with a cake pan and 40 lbs of my son's dumbbell weight, but I try before I buy, lol!

It was indeed my first time on this channel, and I've subscribed. I like what you said at the end about how it's hard to wait for the ageing. I've tasted things like 9 year old cheddar and 20+ year old whisky, and I wonder how people manage to wait that long for things. Then again, I have a bottle of Fuller's Vintage Ale from 2014 sitting in my pantry and I'm still waiting to open it. And then sometimes you forget about stuff. I recently found some bottles of brown ale that my uncle made 17 or 18 years ago and they were still very nice, not even highly hopped or with a high alcohol content, which are the main preservatives for beer. Love your kitty, btw.

"kitty flip" lol. Question: would sealing the cheese in wax have prevented that bit of mold that showed up or not? Also, you said you were saving that first pot of whey to make caramel? OH MY GOSH!!!!!!!!!!!!!!! I have been waxing mine and fighting cracks...I have my suckerbagger and NEVER thought to use it. This should make my goat and cow cheeses age nicer! THANK YOU for kicking me in the pants! I have a white cheddar that just came out of the press(I use my sausage stuffer to be a crank press) and it is drying...will be bagging it rather than fighting the waxes!!!!!!!!!!!!! My last aged almost 2 years in wax and I had one tiny breach that caused issues on one side.... This should be the best way to do this!

Hi Cassandra, There are some advantages, for sure! It is a very easy process, and the clear plastic will help you see if any mold is developing, or if there is whey accumulating in the bag. If whey does accumulate, just take out the cheese, dry it off with a paper towel, let it air dry for a couple of hours and vac seal it again. Hope that helps, and happy cheesemaking! Lisa

When you strain out your curds, don't let any of the whey go to waste. Ricotta is quick and easy and really tasty with honey on bread.

i heard that all the cheese we buy most of those are synthetic...

Speedy Rax you can tell the synthetic ones from the rest because they are not allowed to put the word “cheese” on the packaging. Also shredded cheese may be mixed with wood pulp or flour to keep it from sticking together. Just buy a block and slice or shred it yourself

Hello from Idaho! Lol, I dont plan to sell my cheese, I just teach people to make it. :) I get my milk from a lovely local farm- Cloverleaf Dairy in Buhl, Idaho. If you are ever up this way, stop by their ice cream shop- it's the bomb!!!
