CHERRY CHEESECAKE - Exquisite and super scenic, perfect for the summer as a dessert after a meal.
★ INGREDIENTS
(doses for 6 people)
FOR THE BASE
200 g biscuits
100 g melted butter
FOR THE CREAM
350 g cherries
2 tablespoons lemon juice
250g mascarpone
250 g spreadable cheese
100 g icing sugar
220ml fresh cream
TO THICKEN THE CREAM
12 g gelatin sheets
30 ml boiling fresh cream
FOR DECORATION
cherries to taste
strawberries to taste
blackberries to taste
meringues to taste crumble
mint leaves
★ PREPARATION
How to make cherry cheesecake.
Finely chop the biscuits using a food processor to reduce them to powder, then put them in a bowl, add the melted butter and mix to obtain a sandy and homogeneous mixture.
We compact the compound on the bottom of a springform pan with a diameter of 20 cm and the bottom lined with parchment paper. We put the base in the refrigerator to solidify and in the meantime we can take care of the cherry cream.
Pit the well washed and dried cherries and gradually place them in a bowl.
Pour them into the tall, narrow glass of the hand blender and blend until you have a perfectly smooth mixture.
We put the cherry puree obtained in a small bowl by filtering it with a strainer in order to eliminate the skins and to ensure that our cheesecake has a homogeneous color.
We add two tablespoons of lemon juice to the puree, which will help us to keep a nice color.
We immerse the gelatin sheets in cold water and let them rest for 10 minutes.
Meanwhile, in a bowl, pour the mascarpone, the spreadable cheese, the icing sugar and the fresh cream and whisk everything with an electric whisk.
When the cream is nice and firm, add the cherry puree.
Bring the remaining 30 ml of fresh cream to the boil and then dissolve the well-drained and squeezed gelatin sheets in it.
We combine the melted gelatine with the cream and mix for the last time with an electric whisk.
Pour the mixture onto the biscuit base and level the surface, then place the dessert in the fridge for at least 4 hours (or even overnight).
Gently open the mold and detach it from the cheesecake, then move it onto a serving plate and decorate it as desired with cherries, strawberries and blackberries.
We finish with some mint leaves and some crumbled meringues and our cherry cheesecake is ready to bring to the table and enjoy!
