Idk if u need this anymore lol but the whole point of the flan is to be smooth and velvety, you should even try to mix rly gently so you're not incorporating air. So keeping the foam wouldn't give the same silky homogenous texture

Hi. I tried to make the flan but failed horribly. There was a thick layer of skin that formed at the top of the mold while it was baking in the hot water bath, and the flan was not actually cooked after your stated cooking time of 45-60 mins. What do I do to fix both of these problems?

You should do an "pastel imposible/chocoflan" is an mexican cake which is basically the same but with chocolate cake, both are baked together in bain marie. 8D
