Cheesy Leek and Potato Pie
for filling
2 Leeks
1 onion
2 cloves of Garlic
1 tsp of dried thyme
2 tsp of mustard
50g of Butter / Dairy free butter
2 medium sized potatoes
1 pint Milk cows or dairy free
1 bay leaf
50g all purpose flour
50g strong cheese add more if you'd like
1/2 grated fresh nutmeg
add plenty of salt and pepper to taste .
for pastry
340g plain flour
pinch of salt
170g of butter
1 beaten egg
bake pie in preheated oven 200c for 40- 45 minutes or until pie is golden brown top and bottom.
