David Kinch learned many techniques while working in Japan. He also asked a lot of questions. And many of those questions had to do with fish and in this case, sashimi. As Eric Ripert puts it, “It’s intense but very refined and very harmonious." This dish is an homage to the product and David’s philosophy on cooking.

Every person i know from my profession that is great is humble in its knowledge. They even question “stupid” ideas that someone just branded stupid.

Justin DeMatteo He was voted one of the top 10 chefs on the planet this year. Ranking higher than Dan Barber (Blue Hill), Grant Achatz (Alinea), and Daniel Humm (Eleven Madison Park), as the next highest chefs in America.

Chef Ripert is not only one of my favorite Chefs, he's also one of my favorite humans. For the last several years, my heart hurts when I see him because he's the one who found his best bud Tony. Gentle soul he has. Always asking questions, always wanting to learn even though he's one of the best in the world.

+Rambalac In western cuisine, fish is elevated with salt and oil. Even though it's called 'sashimi' it doesn't have to follow strict traditional rules, especially when the chefs are influenced by multiple cultures and not just Japanese, why would they want to make a dish that doesn't fully represent themselves? According to definition or not, I'm 100% sure that he knows good food more than any of us.

For my taste they ruined nice fish with salt, vinaigrette and sesame seeds. :/ And basil? Nah.

A lot of fish* used for sushi and sashimi is often brined with salt and vinegar, so this isn't really ruining anything that traditional sushi hasn't already ruined. (Most of them even, except some like salmon and tuna. And even salmon could actually benefit from a short salt brine, depending on the quality and how it's been stored).
