Actually, Gordon himself was fed-up with working with so many restaurants for over a week, only for them to relapse and close down due to not listening to his words and basically wasting his time. As such, he himself got fed-up one day and just cancelled Kitchen Nightmares. This is an alternative for him to try and help restaurants, without the stress of working for multiple days with these arrogant restaurateurs.

Joe Franklin no , they needed new management. It’s not exclusively the chef fault regardless. I’ve worked in restaurants that’s why I wrote this comment, I’m speaking from experience. Managers should be goin into walk in freezers MULTIPLE times a day @ least once a hour. So there is no way if the managers we actually doing there job that any worker including the chef would be able to make mistakes like that. Furthermore they had shit in that freezer that been there for months, it’s no way they ever go in that freezer to inspect and that’s the problem. You don’t come down on the Chef you come down on the person who was suppose to be directing him

A head chef is a head chef. Ultimately it's up to him to manage this stuff and to take the blame for anything that goes wrong, then fix it. If a ship has terrible conditions you blame the captain. You might give the workers a talking-to, but the captain is the one who is at fault.
Jeff Day It's a legal requirement for Channel 4 to put that message out. We have a watershed here in the UK and that's why Channel 4 show the message.

The producers prevent the staff from cleaning. If they do, the producers cancel Gordon's visit. They do this so there can be "dramatic" scenes like this. Of course, the owners could just clean BEFORE contacting the show.

Yes there are health inspectors in the USA. They only visit every few months and they visit twice as often if there was a bad inspection recently, or if they get calls from people about violations. It's really easy to pass inspection because 99% of the time you know when they're coming, so you can clean your ass off and pass then go right back to being disgusting.

Yes. Many restaurants pay off the health inspectors to look the other way. And even the few good eggs who don't take the money are so few in number they can't possibly inspect every place, every year, and do a thorough job. There's a serious lack of manpower in the inspection business.

I worked my way through college in restaurants. Started as a dishwasher, finished up working saute. I walked into one kitchen which was one-tenth as bad as this once, during a job interview (after the first job, I insisted on that before the interview, as I had heard horror stories), turned to the restaurant manager who was doing the interview, and said, "You don't need a new cook; you need a new restaurant manager. I wouldn't be caught dead in a place like this; you're going to kill someone and ruin a lot of resumes." And walked out, to his derision; I'll give him this: he could curse with the best of 'em. When I got home, I called the health department, told them my name, my restaurant resume, and what I had observed there. I drove by two days later, on the way to another interview: The place was closed, by order of the health department. I learned to cultivate a relationship with the local health department; when an inspector would show up when I was at a restaurant, he or she would say, "Oh, it's you. Well, looks like I'm going to have to work hard for my ticks today." Because I took pride in my work and my cleanliness; and I still do.

It is also his/her job to make sure everyone is doing their job as well. In the army if you don't do your job you can guarantee someone is going to shit on you from a great height. Actually, if you watched the full episode, the sous chef (the woman who got promoted here) was trying to tell the owners about how the ex-head chef was running things, but nobody listened to her. She really helped the kitchen get back up to standard after she was promoted-- she deserved it.

He never threatened his customers with a knife and told them to get fucked or that his dry elk was the tenderest meat. To be fair alot of owners hire a head chef and pay them quite a bit of money so they don't have to worry about the kitchen at all. It's all on the chef to run the kitchen. If they see some questionable things i'm sure he spewed some nonsense about how this stuff happens in all busy restaurants. Which is not true at all, 2-4 hrs a night after close to clean. have a a part time worker assist on a slow/ closed day to help properly store and prep. It doesn't take much to make things right and proper, but it does involve over time pay in most cases and most business owners won't have that.

I agree, the owners should have intervened long before.. However like the other person above me said, the responsibility of the kitchen is always with the Head Chef.. As you have someone responsible for the front of the house as well and fuck ups in the front are the responsibility of the person leading the front.. However the Sous chef could also have intervened and cleaned, the waiters could have intervened, told the owners or even call the health inspectors.. But the Head Chef is and always will be the one that should have not have allowed it to have gotten this far in the first place.. The hygiene was horrible.. I agree they should all have taken some responsibility, but it would still need to be the head chef that is fired for neglecting his job.. A good cook wouldn't work in a envoirement like that because it destroys the quality of not only your product but also food you put out and you will be a threat to every single person you serve hoping for a decent meal.. Cross contamination is a basic thing easily understood by everyone whom works with food.. That isn't a mistake the head chef can make especially not on this scale and prolonged period of time.. To be ignoring the product waste.. Food worth thousands of dollar can all be thrown away because the head chef neglected his job.. The owners could and should have lost their restaurant over this if someone got sick in the restaurant or closed down if a health inspecter came along.. Just saying, it is shocking to see that they would let the kitchen fall in such state in the first place.. And that in my opinion is as much on the owners as it is on the head chef.. They should have seen it a long time ago..

That is the mentality of a person whom doesn't give a shit about the direction their restaurant or business is going and just standing there for the money while following the flow.. If your boss doesn't take responsibility, then you should.. Because otherwise it is obvious the problem is never going to be solved in the first place.. And that is what the original poster meant.. You can't just stand there and put plugs in your ears and covering your eyes screaming "not my responsibility".. Because by that logic the head chef can say the same.. It was the owners that should have intervened a long time ago since in the end since THEY are fully responsible over their own restaurant.. Not the Head Chef.. And he is 100% right in that regard.. It is easy blaming it all on the headchef, because on paper it is true since he has the responsibility over the kitchen and the product coming out of it.. But all your doing is throwing the person under the bus by forgetting that it to me seems that it was the entire kitchen staff that neglected their job and perhaps even all personel at the restaurant that seemingly refuses to show responsibility when it came to how clean the restaurant was.. All he meant was that they should have decided to clean the shit up by themselves and show initiative and responsibility all by themselves.. Instead of waiting on Gordon Ramsay to intervene and show responsibility for them.. All of them in the Kitchen knew it was crap yet they didn't do anything about it.. The main things that were wrong in this restaurant were the head chef, cleanliness and the menu.. All of those 3 things could have being changed by themselves only if the rest of the kitchen showed the problem in the Head Chef their ways by showing them the right way.. And thus working themselves up to possibly becoming Head Chef..
