Kolkata is where you need to go to eat aurhentic pan indian food. Theres a reason why- kolkata was the first capital of india , before delhi. So the public migrated with their local cooks to kolkata back when trade was done via ships. When those people migrated elsewhere, their cooks stayed behind and started food businesses there. You will find really good pan indian food in kolkata.

I trust you have experienced the flavors of Maharashtrian cuisine, such as Kalhapuri Sukka Mutton (dry), Tambada Rassa (red stew), and Pandhara Rassa (white stew). Additionally, dishes like Malvani Fish Curry, Malvani Fish Fry, and Fish Koliwada are noteworthy. I recommend exploring these authentic dishes. The ones featured in your recent video aren't traditional Mumbai dishes, as the individuals preparing them have migrated from North India, specifically Delhi to Uttar Pradesh, and resettled in Mumbai. If you are still in India, I encourage you to revisit Mumbai-Maharashtra or consider featuring Maharashtrian cuisine in your future travels. Thank you for your content, and I appreciate the engaging background commentary. 🎉

I missed Indian food in Berlin. Even Indian restaurants do not use required spices, naturally to meet the local customers.

Keith, you better learn how to cook that Seekh Khabab, Rumali Roti and Veg/Chicken Kheema balls. I'm from Chennai but spent lot of my time in Bangalore as well, now living in Nashville and not to ask me how much I miss those street foods I get in India.

Each state has some thing to offer and be it the sweets or curries or breads or rice varieties. Within a state as well each region boasts its own unique culinary treasures, showcasing a diverse range of flavors and traditions. From the delectable sweets and robust curries to the variety of breads and rice dishes, each area contributes distinctively to the rich tapestry of Indian cuisine. This diversity reflects not just in the ingredients and cooking techniques, but also in the cultural and historical influences that have shaped each region's food profile.

If possible, try crispy south indian Dosa's with variety of chutneys and parotta salna of southern TN. I'm sure you wouldn't find as authentic as you get one in India.
