In this episode of Chef's Signature chef Michael Schook, chef and owner of Restaurant Héroine in Rotterdam, explains his culinary vision and shows us how he likes to experiment.
Michael Schook originally wanted to become an architect, but he quickly discovered that he felt more at home behind the pots and pans. He worked in a variety of kitchens and developed his own vision and way of cooking. Now he runs Restaurant Héroine with his business partner Eva Eekman in the center of Rotterdam.
In this episode Michael chooses the perfect miso for one of his specialties: a dish with egg yoke cooked at 62 degrees. In the dish he prepares especially for us, this egg yoke is paired with edamame beans from the barbecue, crunchy oyster mushroom and a cream of mushrooms and black garlic.
In the Chef's Signature series we visit chefs that work tirelessly to serve the very best version of their dishes.
