the menu looks fantastic and the presentation too. And as a barista I love the V60 in the end, not many Michelin restaurants offer coffee service at the end. It did look somewhat over-extracted, though. But that's just my perfectionist OCD talking. I would love to know the ratios they are using for the coffee.
@andersandkaitlin4 жыл бұрын
A lot of restaurants in the Nordics are doing tableside coffee brewing with V60 or Kalita or similar. Usually, it's with light-roasted beans, can't remember what they used here. Most restaurants have some way to go on the brewing technique, though. Coffee shops are far superior.

Like som many restaurants right now they are really struggling during the Corona crisis. Our government has ordered all restaurants closed. When did you guys shoot this? Hope they pull through - it would be such a shame if they were forced to close so soon after getting that second Michelin star.
@andersandkaitlin4 жыл бұрын
UlrichUlrich yes, total lockdown in Copenhagen too. We are working every day to get people to order delivery from those who offer that. The city already saw its first bankruptcies because of this. The Jordnær meal was shot last summer.
@UlrichUlrich4 жыл бұрын
I'm Danish - Gentofte native actually. I've never been to Jordnær, though I drive by it many times a week. We're all very proud of having a two time Michelin star restaurant in our midst. And I'm concerned for the two owners' situation in these times. Unlike the two Michelin restaurants Geranium and Alchemist, which are financed by Danish billionaire Lars Seier, who has very deep pockets, Jordnær is on shaky ground financially if the shut-down continues for months on end. And they've stated they can't do take-out delivery.@@andersandkaitlin

You must be very hungry after this and drunk of all the wine. Me and my wife ate at Era Ora once. We were starving and very drunk afterwards. Nowadays all those Michelin restaurants have no more fantasy. All copying from eachother. Where is the honest and simple kitchen. I mean you also pay alot of money to eat in these places. Where is the fantasy and own identity? 2 Michelin stars??
@andersandkaitlin4 жыл бұрын
@@peterclement3763 Dude, if you went to Copenhagen and chose Era Ora, that says it all. That restaurant has been down the drain for years, just lost its Michelin star and ended up closing. A friend of mine went there a week before they shut down and said it was absolute sh*t. So don't even start comparing that to Jordnær, which is a modern, high-level restaurant with top-level ingredients and refined flavors in every dish. The balance of food and alcohol is perfect. You leave satisfied, neither stuffed nor starving, and you're barely tipsy. Just floating on that pink cloud of happiness.

@Acidburn1914 жыл бұрын
This is nice but I'd prefer a nice homey meal that i can enjoy even If I get messy. This is absurd. paying up the a$$ for some fine dining experience. Before anyone jumps the gun and defends something they don't even know, I am in the food industry. Trained in the culinary arts and the sciences of food. This is nothing but noise. If someone told you it was a michelin star restaurant before doing any research and took you there, it would 100% be placebo. Nothing out of the ordinary food.
@andersandkaitlin4 жыл бұрын
Why would a nice homey meal have to replace a restaurant experience and vice versa? Do you not have the ability as a human being to enjoy both? As a trained chef, you should be able to spot the high level of cooking involved here. Any person with dining experience would. And surely, as a chef, you should not criticize the food at a restaurant that you have not tasted yourself, but merely watched in a video? You can say that you don't like the presentations, but that is as far as your sensory experience goes on KZbin. As for the price, this is absolutely in line with similar restaurants in the Nordics. It's always going to be more expensive for some people, depending on the standard of living in their country compared to Denmark, the strength of the currency, etc. Your comment is the only thing that is noise.
