Paulie and Koop were the obvious 2 to go up but unlike other occasions when chefs would argue for someone else to go up instead of them they both agreed they should go up and used the debate to continue to rip into each other before facing off in front of Gordon. This was actually not the first time this had happened in HK11 after the episode 6 dinner service which was one of the worst ever with only Anthony coming out of it with credit in the bank thanks to a strong performance on meat Ray and Dan were clearly the worst performers that night on the blue team and were the obvious 2 up for elimination. But Ray felt that Dan was the reason why he was so poor and HK's oldest ever chef was ready to fight with the young buck Dan and it rolled over into the nomination ceremony as Ray and his team mates would continue to berate Dan

Allergies and taste. The customer who ordered salmon might be allergic to white fish, or vice versa. And even without allergies, salmon and sea bass have different tasting juices so I imagine mixing them would taste kinda gross (kinda like eating chicken cooked in beef juices) and this is a fine dining restaurant
