guys ask your butcher for 'topside'. Its a cut of meat from a cow near the rear I believe. Its just a massive slab of uncut meat (we usually get about 6kg). cut is up yourself and its much cheaper than buying steaks pre cut.

Try to Flat Iron/Oyster Cut, if not, check for Denver Cut, or Shoulder Cut. Flat Iron is fabulous. Tender, and flavorful. It depends on where you live, but it should run you below you $8 a pound. I used to buy a pound for $6.00 couple of years ago. Highly recommended. You can marinate it or just grill like right a way like a strop steak

The steak is called Flank steak and can come from the butt or the abdominal wall. Same type of steak in two different parts of the body.

The flank steak comes from the belly of the cow known also as the flank, thus the name flank steak. It sits on the interior of the belly, whereas the cut called "rose meat" which is used for tacos, is on the exterior. It does not touch the hip of the beef. I suppose I'm confused like you are.

All vegetable oils are toxic when cooked. Butter, ghee or if you must, coconut or avocado oil are ideal. Bacon grease is lovely as well.

The butt? Absolutely not. The butt (in butcher terms) is the shoulder (nothing to do with the rear end). He is correct that it is the side abdominal muscle though. Perhaps butt in the UK mean something different.
