FISH TACOS
1 kilo white fish fillet, cut into strips
Batter:
1 whole egg
¼ cup all purpose flour
¼ cup fresh milk
2 tablespoons lime / calamansi juice
Salt and pepper, as needed
Potato starch, for dredging
Cilantro Lime sauce (prepare two sets, one with sriracha and one plain):
150 grams mayonnaise
60 grams heavy cream
3 tablespoons sriracha
2 tablespoons lime or lemon juice
2 tablespoons finely chopped cilantro leaves
2 cloves garlic
Salt, as needed
To assemble:
Small taco / tortilla wrappers
1 cup chiffonade cabbage
2 red onions, thinly sliced
2 tomatoes, sliced
Frozen avocadoes, as needed
Cheese grated, as needed
Bunch of cilantro leaves, coarley chopped
Lime wedges
Salsa:
2 onions, chopped
2 tomatoes, chopped
1 bunch chopped cilantro
Lime juice
White sugar, salt and pepper
