has to cook fast, chinese restaurant is different to westerner restaurant, chinese restaurant is not like a factory , it''s really mostly depends on chef's own skill.

You have to cook this dish at such a speed, cause it's not boiling or streaming. Otherwise the food will lose their tastes or even get spoiled.
