When I went to culinary school I was taught to make a roux but outside of that I've never seen anyone make a roux. I like that it's basically a preference because you can still make good mac n cheese without it

I literally was about to comment the same thing. I’m from South Carolina and (at least in the town I’m from) nobody made a roux for their Macaroni and Cheese. And that’s going back 4 generations! When I moved up north I started seeing the roux thing and people adding 3 or 4 different cheeses and I thought it was weird lol. Not saying it’s not good, but our grandmas and great grandmas who made these dishes what they are, didn’t have to do all that stuff. They kept it real simple and not only did it come out delicious, but it tasted better to me! I gotta remember though, diff strokes for diff folks I guess. 🤷🏾♀️

After we cooked the noodles on the stove, we'd drain the noodles, mix cut up cheese, milk and eggs. Now of course we wouldn't still be on the eye. Then we'd dump it in the baking pan, put mire cheese on top and then put in the oven. Seasoning was usually some pepper and maybe some salt.

A roux is good but not necessary. The cheese sauce doesn't have to have flour. Cream and cheese are good, and some people use an egg. It just depends on the taste and texture you are looking for.

“Flour, butter, milk” sounds like a béchamel to me. My father used to make the best macaroni and cheese and he just heated up some Velveeta and whisked in evaporated milk and that was his cheese sauce. He brought it to every event and it was always the first thing to go 🤷🏾♀️

Flour & Butter is the Roux. Adding milk afterwards makes it a Bechamel. Adding Parmesan afterwards makes Alfredo.

Once I got to the point that my roux stopped turning out right, I started doing all kinds of stuff. I cook my elbows in the milk and proceed to start my sauce that way. It turns out pretty well
