You don’t ASSUME that the person watching automatically knows why you do certain things. You explain why you do everything which is ESSENTIAL!! Maybe the person watching is a very new cook. Maybe the person isn’t new but has never tried it your way. Plus, your demeanor is real, warm, and inviting. That’s a good formula. Keep up the good work!!!

@@jameslisi5092 I see what you mean. You’re right. I watched the video and reread the instructions and there is no mention of when to add the 2-4 tablespoons of butter listed in the ingredients. I am going to melt it and add to the bowl mixture. I think that is what is intended. The only time he uses in the video is to butter the baking dish.

My mom's from Charleston and she taught several of us kids how to make her baked mac n' cheese. Her's is the macaroni pasta, milk, eggs, cheddar cheese and/or cheeses of choice diced up (I usually use medium and sharp), salt, pepper, paprika and butter. You mix the cheese, eggs, noodles and some seasoning. Then you take the milk and pour it on top until it almost covers the mixture. Sprinkle some more of the seasonings on top and then take small slices of butter and put them across the top. Then we cover it and bake it. After so long, take the covering off and finish baking until it gets more golden brown on top. I tweaked the way I make mine. I add a little more egg and also onion and garlic powder to mine. I've made it for friends for get togethers and to take when their family has passed away. It's always a hit and always gets eaten quickly. My mom makes her's for holidays and family get togethers. It's always the first to be gone or almost gone by the end of the day. I like mine topped with a little ham gravy that we have on Thanksgiving, Christmas and Easter. Your's looks really good. I have nutmeg but not the mustard or other seasoning you used. I'm saving this recipe to hopefully try it later when I can get the seasoning you used.

@vivianclark7032 I love the flavor onion gives but I don't like the texture of onions, so I only use it in certain foods when I know I can pick them out of my food. That's why I prefer to use other seasonings with the flavors I'm wanting or find creative ways to use it for family that likes those things. I hate that I have a problem with certain food textures, been that way as far back as I can remember and I'm currently 44.

My personal preference is to use less milk; I like it creamy but not that creamy. But the recipe sounds delicious. The mustard powder is a small but mighty flavor enhancer. I love the idea of layering the cheese halfway thru and then again at the end. YUM!

I usually make mine with a beschamel sauce and add garlic cloves when I start cooking the half and half. Also different spice mixtures, I like to add chipotle powder, or hickory smoke powder😊. I’m a bit lactose intolerant, so I would have to edit some of the milk and cream cheese probably, but this is a wonderful recipe! I enjoy watching you cook so much! Also, despite what you say, you are such a polite eater, I love that. Love your kitchen too!❤

@jangrier7828 the trick with rue is low and slow and constantly.when making rue turn the fire down and don't get distracted during cooking..stay with the rue and Keep stirring until the lumps are gone and then when you add the milk or whatever you are using keep mixing until the lumps are gone because if you let it sit the lumps will not go. I make a cheese sauce I don't use rue and eggs.

AB, I just made this. It was my first time ever making Mac N Cheese. And thanks to you, I made two full size pans and my family couldn't get over how delicious this was! Thanks for making our day with your recipe. I will definitely tune in and subscribe for more. I forgot to tell you I also learned how to build my weber kettle bbq in your past video, thanks for that too because I had some great grilling last summer! The only thing I didn't understand, (not sure if I completely missed it or if you didn't mention this), was how many boxes of macaroni you used, also how much cups of milk you used, so I took a leap of faith and I used 2 boxes and 1 cup of milk. And it worked out great! Thanks again AB! 🧀

Watching this made me hungry!😋 My personal twist on this recipe would be the topping. After 30 minutes in the oven, that last topping wouldn't just be cheese. I'd add my favorite herb seasoned breadcrumbs into it, then back in the oven for 15 minutes. YUMMY!😋

It makes it more into a custard and you don't need a roux when you have eggs.

You make cooking look easy. I wish I enjoyed cooking. Seasoning makes the dish. I get overwhelmed with choosing the right seasonings, and I end up with a cabinet full of seasonings I don't know how to use properly or a hundred trips to the store lol.
