This video really shows how well Chef Wang understands about ingredients. Grass Carp and Tilapia are pretty similar when they are both fresh. Visually, it's almost impossible to tell the difference.

生魚 is Sneakhead not Tilapia there’s quite a difference in terms of their texture

no, it is 烏鱧(Channa argus,or Northern snakehead). chef thought it was Grass Carp(草鱼)。
looks like still a great place to eat… Chinese restaurant service is always bad as in the states.. 15 years is a long time and they adjusted the flavors to the locals.
