1 LITRE WATER
600 GRAMS SUGAR
7 NOS LEMON
1 PINCH SODIUM BENZOATE
METHOD
STERILIZE THE AIR TIGHT JAR AND LID WITH STEAM AND SET ASIDE ON CLEAN SURFACE
CUT STRAWBERRIES INTO QUARTERS
IN A THICK BOTTOM PLACE STRAWBERRIES AND 1 LITRE OF WATER AND BRING IT TO SIMMER
ADD SUGAR AND CONTINUE COOKING
REMOVE THE SCUM FROM TIME TO TIME
WHEN THE TOTAL QUANTITY REDUCE TO HALF ADD LEMON JUICE
AND CONTINUE REMOVING THE SCUM WHICH APPEARS ON THE SURFACE
WHEN THE STRAWBERRIES BECOME PULPY
ADD A PINCH OF SODIUM BENZOATE AND COOK FOR 2 MINUTES
ALLOW THE MIXTURE TO COME TO LUKE WARM CONSISTENCY
STORE THE JAM IN STERILIZED BOTTLE IN A COOL AND DRY PLACE.
