Kadhi kachori is a street food. Here i am presenting traditional recipe of urad dal kachori, served with tangy kadhi which is specially prepared for kachori. It can be eaten as any time breakfast or evening snacks.

Ajmer ki Kadhi kachori
Ingredients
For kadhi:
Besan 1 cup
Turmeric powder 1 tsp
Salt 1 tsp
Yellow chilli powder 1 tsp
Citric acid/ Tatari ¼ tsp
Water as required
Oil 2 tbsp
Mustard seeds 1 tsp
Hing ½ tsp
Pounded masala mix 1 tbsp
Ginger- green chilli paste 1 tbsp
Water as required
Pounded cloves ¼ tsp
For pounded masala mix
Coriander 1 tbsp
Cloves ½ tsp
Black pepper 1 tbsp
Saunf ½ tbsp
Jeera ½ tbsp
For kachori stuffing:
Oil 1 tbsp
Jeera 1 tsp
Saunf ½ tsp
Hing ½ tsp
Ginger chopped 1 tbsp
Green chilli chopped ½ tbsp
Moong dal soaked ¼ cup
Red chilli powder ½ tsp
Black salt ½ tsp
Roasted jeera powder ½ tsp
Pounded masala 1 tbsp
Water as required
Amchur powder ½ tsp
Kasoori methi ½ tbsp
Coriander chopped ½ tbsp
For kachori dough:
Refined flour 1 ½ cup
Salt 1 tsp
Ghee 3 tbsp
Ajwain ½ tsp
Water as required
Oil 1 tsp
Oil for deep frying
