Derrick is hilarious! Bring him back! What's even more hilarious is that Jack did another burger video a month ago (Jack Daniel's Burger) and after 15 years of having a cooking show...still can't cook a burger. Buns, untoasted (even though he says they are). Cheese, unmelted. "Caramelized" onions, still crunchy. And his jack daniels glaze is nothing more than warmed up jack daniels. The reveal at the end is comical...a burger floating in a pool of warm jack daniels.

Upon seeing how utterly incompetent and disorganized Jack is, one of the hosts (Mike 'Rooster' McConaughey), in an attempt to salvage the episode, stepped up to the plate and did most of the work for Jack. Even with this unexpected help, Jack's sauce failed miserably, and its creator tried to excuse himself by bringing up the “recent” death of his mother, which happened four years before the filming. The hosts tore into Jack, accusing him of coming to the show just for the publicity, and making him cry on national television.

This goes to show that just because you have confidence and believe in what you’re doing (which Jack appears to do here), it doesn’t mean you’re correct. I’m a pianist, composer, and recording artist of over two decades. I’ve been playing since I was two. Some students I’ve taught want to do something off the beaten path, which is fine, but it’s amazing how confident they are in things that clearly don’t sound good (harmonies, rhythms and structures that don’t achieve their goal), yet they claim to be open-minded. They might be open minded to “unconventional ideas” but they’re not open to correction. Brian, you always talk about learning from failure, but failure in and of itself does not guarantee learning. It simply presents a choice: to either be humble and grow OR continue down a path that is destructive.

I’m glad you mentioned salt and pepper being the only seasonings needed for a burger. I know people who go crazy with seasoning mixes for burgers because they “need to be seasoned”, but if I’m having a burger I don’t want the flavor profile to be BBQ seasoning, Italian seasoning, Cajun seasoning, etc. To me, it’s different to have those other flavors come from the toppings/sauce instead of an over seasoned patty that barely tastes like meat or tastes like a flat meatball.

Hey Chef (s), this is how you stretch meat. (The egg, bread crumbs, maybe some onion, and so on not the raw part.) My mom used to make this thing called a "slug" (nickel) burger. Pretty much a meatloaf formed into burgers. Why? Cause when ya broke or grew up in the depression you had to figure crap out. So don't be too grossed out by the idea of it Now that raw crap, no. For a nickel (slug) burger you cook the di## out of it.

Chef, I am curious about your point of view on this and hope to hear a response. Early on, Jack was doing his own or his family's recipes (like the cheese salad). However, over the past few years, most of the recipes that he does are ones that he finds on the internet. As part of the video Description on youtube, he cuts and pastes the recipe in its entirety from whatever website he found it from without giving them any credit. He presents recipes that he takes from someone else as his own. I have recently taken him to task over this. IMO, this is plagiarism. While it may not technically be illegal, it is certainly a moral/ethical issue (which can be easily solved by crediting whoever you took the recipe from). I know, for instance, that Auntie Liz got in a huge amount of trouble and had to pull her cookbook for copying recipes and presenting them as her own. He recently responded to my criticisms in a video entitled "Monster Wings in Mushroom Gravy". His response was: Once you publish a recipe (whether in a book or on the internet), it is free game for anyone else to steal and present as their own. Besides, they "probably" got the recipe from someone else so it's fine to steal their recipe without giving credit. I think he's a real snake. AITA for calling him out, or is it not a big deal to reprint other chef's recipes and take credit for them?

I am not a lawyer, but my understanding is that recipes cannot be copyrighted, so from a strictly legal perspective, Jack isn't doing anything wrong (and he's far from the only popular KZbinr who copies recipes). However, taking someone else's recipe with giving credit is certainly not ethical, and there was at least one recent case where a cookbook (Makan by Elizabeth Haigh) was pulled shortly after publication due to accusations of copying another chef's recipes.

Honestly im only 7 mins in, and Im learning that I make a lot of mistakes making burgers, and I cant wait to use all these tips so far and see the difference. This is why I enjoy coming to these reactions, I usually always learn at least something, and my girlfriend has told me over the last 2 years how much better my cooking has become. I love it, any animal that died for us should be treated with the utmost of respect for their sacrifice, and cooking the best you can is the foundation of honoring that imo.

I will say as far as the bread crumbs... not uncommon in the midwest, and in Japan they LOVE fillers in their burgers. they add crumbs and such to A stretch out the meat which much more expensive there and B they like a "soft" patty. they are however COOKED!

I think adding egg makes sense if you want a more "meatloafy" texture, if you're doing stuffed burgers, or if you're on a campout or somewhere where you have limited product and a lot of people to feed.

Dude I love this one so much lol. Frenchie is great, but Chef Derrick is so much more patient and honestly very well-spoken and a good teacher when explaining cooking concepts. One of the best parts is watching him try his absolute hardest to be nice at the beginning, but slowly losing it over the course of the video ahahah.

This is so accurate to NYC. You have your studio at one angle, and turn around and it's just shelves of stuff. I still haven't visited Mission Sandwich Social (just haven't been to Williamsburg in general recently, I'm from southern Brooklyn and it's not exactly a quick drive or trip via subway), but next time I'm there I have to remember to check it out. It's wild how much everything has changed since pre-covid times around the entire city, even though it's really not been that long. Before the covid era, I walked past your location dozens of times. Great to see you building up your small business in the area, and at least you didn't end up in Greenpoint where getting to you would have been much more of a chore.

That burger is a crime. We need the burger police to arrest that man! In my experience properly melting the cheese is especially important (I mean aside from not eating your meat raw), because regular unmelted cheese just doesn't have the flavour or consistancy you want on a burger.

Kay's cooking is bad, but I have never seen her serve raw or spoiled food like Jack. That's why I think she is trolling the internet, and is careful not to poison her son that tastes her food. Jack on the other hand seems to not know what he is doing, and is too proud to learn. He frequently takes food to his church to feed other people. He really seems to be a danger to other people. Unless it's a clever troll, and he doesn't actually feed his church the stuff he makes, he needs to be stopped.

I think concept is salvageable, wouldn't be my favorite, but properly cooked, slice of grilled pineapple instead of lettuce and pepper rings... Just might have something worthwhile. Although I still prefer simple burger with American or blue cheese and bacon

I love this format of videos with a guest and cameras switching from an interview-like setup to the "reaction video" face cams! It's way more interesting visually, and the guests really do add a lot :-)

There are two problems. First, there's no need for egg in a burger patty; you only need egg to bind the meat if you're making meatballs, meatloaf, etc. Second, the burger was raw on the inside, which means raw egg and therefore a risk of salmonella.

The Swedish Food Agency says that eggs from outside of Scandinavia should never be eaten raw because of salmonella, but Scandinavian eggs have virtually no risk of salmonella. This is due to good regulations and hygiene procedures throughout the production chain.

Jack honestly doesn’t know that overcooking any protein will make it tough because he’s never overcooked anything in his life. Rare chicken, rare pork, and now raw bison. That said I still perceive him as the type to cook steak well done and serve it with A1 or ketchup.

I'm noting that not cooking on a high enough temperature is a common denominator in most of these cooking horror shows on KZbin. Kay of Kay's Cooking infamy is guilty of this too, pan just nowhere near hot enough to properly cook the food. Likewise, witness the meagre sizzle coming from Jack's lukewarm burger pan...
