I don't always follow it word for word, and I sometimes have to substitute ingredients, but your recipes are always so useful. I'm a new dad, and I find the online recipes really hard to navigate when trying to quickly put the meals together, but your videos make it really easy to jump to the parts I need and have helped me add variety to my family's dinnertime. I made this just yesterday. It was my last cooked meal for 2022 and it was a great one to end the year with. Instead of using yellow onion, I used red since I had a bunch more of them in the house. I also used dried thyme and not fresh. One addition I made was a bunch of diced chives that I added right at the end. That was nice.

I made this beef stew last night and it was exceptional. I also made the garlic-butter mashed potatoes to accompany and the eye opener was that I can make buerre noisette ahead of time rather than as a finishing sauce as I had been taught. It never had occurred to me before. This opens up a whole world of taste experiences since I was reluctant to make this sauce because it would not always come out as I had hoped..

Made this today and it is absolutely delicious. Will definitely be making this regularly. So easy. It just bubbles away all afternoon and takes care of itself. Meat was falling apart. Added 250g of Swiss Brown Mushrooms with the celery and laid some baby carrots over the top for the last hour. Thanks for an amazing recipe.

Very similar to mine. I use 500 ml of beef stock and red wine or a nice Ruby ale. I only use 2 onions as I like to use half a swede as well for extra veg for the kids. A tbsp of wholegrain mustard works well too. Great vid 👍

Great recipe, Chef. Thank you for sharing. I have been replacing red wine with good quality grape juice and a table spoon of red wine vinegar. Results are fantastic. However, I go light on carrots then to avoid the dish being too sweet. Keep it up, Jack. P.S. I still recommend trying the dish at the end of the video and describing its flavour and how it turned out. Just a suggestion of course, but I have a feeling that it would increase your views - which you thoroughly deserve.

Any last little bits of doubt disappeared when I watched the orange yoghurt cake a few minutes ago 😂😂 I’ve just scrolled right through all of your videos (and watched a bunch) and there are heaps I want to try. I’m on a mission to make as much from scratch as I possibly can, so condiment recipes are great for me! I’m definitely going to try your ketchup when my current bottle runs out. I might need to use passata rather than tinned tomatoes though as there’s a flavour to tinned tomatoes that I can always taste no matter what I do with them. Hopefully by next summer I’ll have moved and will have a big garden and a bigger kitchen and then I’ll try canning my own home grown tomatoes. I suspect it’s the actual tin that’s the problem for me so home canned in glass jars should be fine. Can I request a couple of recipes? There are 2 commercial products that I really like exactly as they are, but I still want to make them myself so I know what goes into them, and so I can use allulose or another sweetener instead of sugar so they’re healthier. I don’t need you to use a sugar substitute though, I can do that part if you use regular sugar. The first is Fletcher’s Sweet Spiced Gherkins. I’ve tried a couple of times but haven’t got the spices quite right yet. I love a couple of those diced up on an egg and mayo (yes, homemade with an egg fresh from my chickens) wrap. The other is Heinz baked beans in BBQ sauce. There are a couple of recipes out there for the tomato sauce version but I really like the BBQ sauce and I’m a bit stumped. That one had been a one day I’ll get to that plan, but they’ve changed the tin sizes and the BBQ only comes in a huge tin now and so I have to have it 2 days in a row and that gets annoying so I’d like to start making it sooner if I can. Eventually I will want to adapt whatever recipe I use to be pressure canned and cook the beans in the sauce in the canner, but until I move I’ll just do a little potful at a time as I really don’t have enough space here for canning. Each time I’ve done it I’ve ended up with chaos that’s taken me ages to sort out so I’m not canning for fun here anymore as it isn’t fun. I can’t wait to move! I’m making progress on getting this house ready to sell so hopefully it will all fall into place soon.

Jack calls this a ‘casserole.’ I call it ‘beef stew.’ I followed his instructions to a ‘T,’ and the end product was excellent. The sauce has the best flavor of any ‘beef stew’ I’ve ever had. FYI, I used Malbec wine, because it was the only red I had in the house.

In England, traditionally, a stew was cooked on the stove top; but, a casserole was cooked slowly in the oven - in an earthenware pot so the gravy becomes really thick. I like parsnips in mine. Reminds me of cold, late autumn days and winter. I use wine in many dishes but usually only beef stock in a beef casserole. And half a teaspoon of sugar in the tomato paste to edge out any bitter taste. Chef Jack uses balsamic vinegar, which I'm going to try next time. Plus, way back in the day when you could still get a joint for roasting marbled with rich fat, my mother always used the beef dripping for browning her meat. Delicious!

Just gave this a go. It was a nice dish. And first time ever using the bowler blade. I honestly have to disagree on the choice of cut and i was thinking that from the first cut i made. It wasnt terrible but the meat was stringy and to lean I would go with something that has more connective tissue and some fat. Beef shin i think would be the go. Enjoy the channel.

I especially like that this recipe uses bolar roast. It's often the most affordable beef where I live and I was stuck for ways to use it. So glad mushrooms aren't in this.
