I'm so glad I found your channel...and this video! The best Paella I have ever tasted was just a few kilometers south of you in Sant Salvadore - and it was very similar to your arroz negro con chipirones y gambas. Thanks for sharing this, James. Que bueno! Arroz negro! Es buenísimo!!! Cuando voy al restaurante siempre dudo en coger paella o arroz negro. Porque es que el arroz negro es tan tan bueno! Esta receta que gas mostrado está muy bien! Felicidades. Estoy deseando que llegue el fin de semana para hacerlo tal como la o explicas!

Is squid ink something you can easily find out there? I can get it from my restaurant suppliers. The deep rich colour of this paella is the real star of course. I enjoy your channel very much!! I’m addicted to Spanish cooking lately. Our friends are coming to our house for dinner. I’m challenging Spanish food!! I’m Japanese in Hawaii. Is it odd to serve Paella with Tapas? Tapas with Salad?? I would love to learn how to serve Tapas at home. Hello again! Your Paella Negro looks amazing. I worked in a restaurant before and they make this on special occasions but I wasn't able to see how they make it. So I am thankful that you made this. Hehe. You have really wonderful recipes. and the tips you gave are really helpful. Also, I want to share, in my province they make Arroz Valenciana... Mmm i love this dish (I usually make the 'fideuà fosca' ) but in home we've always used instead of 'pimentón' the "ñora". We cook all in the same pan (starting with the calamari and prawns/.. and taking them once done) to potentiate the flavour. Ah, one trick with the ink. Pour a bit of warn 'fumet' in a glass, put the ink inside and stir, then it's easier to integrate to the fideuà/arroç. NICE VIDEOS!! I like how you explain the dishes and teach while reacting.

Hey! thank you very much!! haha I use a stone and my steel, but i need to get another stone as it's old. I have never had anyone else sharpen my knives. Well at the moment Im doing KZbin full time. but i have worked at (Burners Tavern, The London Edition) under Chef Jason Atherton and at Hotel Arts Barcelona (the Ritz Carlton). Thanks for the reply! I also have a stone but it's pretty cumbersome to sharpen a large knife on a small stone, even more so if you add my laziness to the equation.. And I asked because I'm moving to Barcelona in August and thought you could recommend some place :) take care!

@@v0yyy no problem!! i know what you mean but there are some very good youtube videos on how to use one!! check out Burrfection he is a pro knife sharpener! and as for work in Barcelona I would say that, hotels may be easier and safer to find a job. but now with this crisis, it's not the best time. let me know if you need any info on places to rent! stay safe!! :)
