Maestra Jana, this is great! Here in Costa Rica we also have a vegan Worschestershire substitute called "Lizano sauce" which was created by a Tico a hundred years ago to try to duplicate "the English sauce" used by his bosses. It is made from vegetables and spices and has become a national treasure with it on every table.

It is a great receipe, allthough I do wonder if you may have omitted one ingredient, which is the "anchovy" simulant? Would you for instance have used powdered nouri-sheet/kelp-powder for the "sea-taste", or do you have a special reason for not adding kelp/nouri to this sauce?

Great question! The anchovies are added to recipes due to savouriness, sharpness and the ability to connect all the flavors together, acting like an umami bridge kinda additive and not necessarily (if not at all) for the sea flavor properties. :)

I’d go with a ground mushroom powder. Trader Joe’s has an umami blend that is very savory but it also has extra ingredients like salt and dry peppers.

I love this! As much as I love Worchestershire Sauce I do not use it regularly so 4 weeks expiration would not work. But I can't see why vinegar, sugar and dry spices wouldn't last for a year or more, maybe by boiling the vinegar with sugar first, cool and then add spices? (It works for refridgerator pickles) . What do you think?

That's an excellent question. First, I'd like to point out that this is a substitute for those who cannot find it available where they live, like me for example. Or for those who don't want to buy processed food also. But back to your question, The reason I give a maximum expiration date is due to health safety reasons. But it can also be frozen in small portions for future use. I will do a test on how it would behave if using the pickling or fermentation process, actually a great suggestion! ;)

its a flavor enhancer so you can add to your saws, ships, sauces, tacos, etc. 1/2 teaspoon goes a long way tho. :)

I can imagine this 'worcestershire sauce' is elevated if the ingredients are simmered with fresh onions, ginger and mild chillies and perhaps mushrooms.

OOh I like this! I actually buy Worcestershire powder- there are several vegan versions to be found online- but it's kind of expensive. I paid about $25 for a lb of it- and then I am nervous to use it often because it does contain preservatives and non-caking agents. When that runs out, I will definitely be making my own!

wait--no tamarind? to me, that's the key flavor in worcestershire. when i went vegan, i switched from lea and perrins to pick-a-peppa...the only difference between pick-a-peppa and worcestershire is that pick-a-peppa is thicker and maybe hotter (spicy). :)

us here - Pick-a-pepper contains mango rather than tamarind, does it not? Mango is sweeter and doesn’t have the pungency of tamarind. I wonder whether blending in a small amount of tamarind paste would make the taste closer. Lee and Perrin’s is also thinner and has more black pepper and savory notes; I’d try tweeking it with fine ground black pepper, tamari, vinegar, and water. I do like Annie’s Worcestershire, but it doesn’t taste much like the real stuff. I always liked A1 streak sauce, which I believe is vegan and seem to recall tastes vaguely similar to Pick-a-peppa. Of course, only Annie’s is organic.

Nooooooooooope call it something else! It's made from fish and meant to be put on steak so even the general concept is non-vegan but I will concede, this is absolutely delicious, but taste like spiced vinegar on cheese.. but on bruschetta it would be extra delicious!

easy for you perhaps but it's not available here where I live. And many other people don't get access to vegan alternatives, hence the substitutes that I make on my channel, to help in cases of scarceness. ;)
