I worked for Big Boy Restaurants through its many iterations: Manner's, Consolidated, Stouffer's, Bob's, Elias Brothers, etc. The sauce was NEVER orange. It was ALWAYS cream colored.

Oh, Thank you, Thank you, Thank you!!!! When I was a little girl, the Big Boy was the only thing I would eat. I spent my allowance on it every weekend. Then, the restaurants that sold it in Memphis, TN stopped selling it due to franchise rights. I haven't been able to recreate the sauce no matter what I did. I was told it had Cocktail sauce in it, but you didn't use it. I haven't tried your recipe yet, but you worked there and made it so I'm trusting you. Childhood favorite coming back .

Big Boy Sauce NEVER had cocktail sauce in it. It's always been a creamy off-white sauce with chunks of relish.

growing up sundays= a trip to a bob's for a bowl of chili spaghetti(plus onions) with that square slice of cheese on top and toasted/buttered burger buns.........wait.... is there a recipe for that chili?!?!

The original Big Boy in Glendale and now in Burbank California uses mayonnaise on the bread and tomato relish on the meat. This sauce is from other franchises.

Thanks for the info. Fries, Big Boys, and Diamond Jim's were my favorite food when I was in high school. Actually still is to some extent, but Bob's Big Boy Restaurants have all closed in my area in Ohio. A couple of bars around our neighborhood have copies of these iconic sandwiches.

I worked for the franchise from the summer of 1969 until they closed our store down in 2001. You must be in the east side of Cleveland; I remember hearing that the Big Boy over on the Lorain area Rest Stop of the turnpike was still open when we left Ohio in 2002. The food, other than the original sandwiches, went downhill when Elias Bros took the franchise over from Bob's. I remember hearing something about Bob's regaining the franchise later on, don't know if it happened or not.

The Bob's in Santa Monica and Culver City didn't have a special sauce. Mayo on bottom and middle buns with a ketchup sweet relish mix on the top bun. God I miss that place.

Great vid and great story! Working in a restaurant is totally a vibe. I have fond memories and sometimes I miss it. Thanks for posting this! I am now a subscriber based solely on this vid. I've been to the Big Boy in Bismarck, ND (which is NOT to be missed if anyone reading this is traveling to/through there). It's one of my rare 5 star google reviews. My go-to is the Alpine Burger, small fries, small gravy. If you're by yourself and think a small order of fries won't be enough, trust me, it's a VERY generous "small". They've even had the courtesy to warn me about ordering larger if they see I'm alone in my car (it's drive-thru only: you cannot go inside). John, do you know if this rumor is true?: I've heard that the restaurant chain associated with the iconic yellow arches, shall we say, "borrowed" the recipe for the Big Boy Original and rebranded it as the Big M**?

Is the one in Bismarck downtown or on the other side of the river? I have heard rumor to that as well, but only after Ray Kroc bought the franchise rights from yellow arch brothers. Back in my youth, there was a Bob's Big Boy Jr in our community. It was kind of a fast food version of Bob's regular restaurant. They had a sandwich called the "Brawny Beef" which was my favorite. I'm not sure if it was served in the our regular Bob's Big Boy restaurant in Toluca Lake. Do you have any information on the Brawny Beef and hopefully a recipe? Also, Bob's onion rings were always different (and better) than the ones that other restaurants served. Do you have a recipe for those as well? Thanks.

The Brawny Beef was made from a seasoned beef patty that had dried onions in it. It was added to the Bob's Big Boy menu in the mid '70s.

honestly I feel like there's some sort of cinnamon taste in it. I was there yesterday, my husband has NEVER been to a Big Boy....he noticed it first....Then I (a frequenter) tried it and said yeah does taste like cinnamon or nutmeg is added to this thousand island concoction.

The Slim Jim is a product of Elias Bros. Big Boy in Michigan. It’s a pressed and grilled ham and cheese sandwich. Never served at Bob’s Big Boy.

This is not the true sauce. Lawrys made the blend which was held in secret. It came from the commissary premixed in cartons. Worked at 1 and many others in highland park burbank etc in my teen years.

That is more of a Big Mac sauce not a Bobs Big Boy sauce

They are relatively the same thing with the exception of the French dressing in the McDonalds sauce. The lemon juice added to the comparable ingredients, simulates a French dressing for the big boy sauce. Agreed, the sauce on the real Bob's Big Boy hamburger is red not orange. Maybe this is the sauce they used in some of the other Big boy restaurants (not sure), but it's not from the original Bob's Big Boy in Burbank Calif..

@@ChefJohnPolitteItsOnlyFood, with all due respect, no, the Bob's Big Boy has mayonnaise on the bottom and center buns and red relish on the top. The other Big Boy franchises, like Elias Bros. did use the thousand island type of sauce. I worked for Bob's in the late '70's as a cook. Made thousands of Big Boys.

@@paulscanter5562 Yes Bob's Big Boy on the West coast used red relish and mayo. On the East coast, the Bob's, Shoney's, Elby's and Elias Michigan locations used the 1000 Island sauce. In Ohio Frisch's Big Boy uses tartar sauce.

It's funny California ,Michigan and Ohio all use different sauces for Big Boy are 2 Cleveland locations use big boy tartar sauce Michigan uses kinda like Mac sauce for the Big Boys

@It's Only Food w/Chef John Politte 1st time getting a big boy in Michigan yes lol I was used to having Big Boy tartar sauce because well Cleveland Ohio it's always been the sauce lol I took a bite of that Big Boy in Michigan and looked at the server and said why does this taste completely different she asked immediately if I wa from Ohio and said hun we use different big boy sauce she I didn't even have to ask she immediately got me one with Ohio sauce to replace it so I learned my lesson if your in Michigan and you want Ohio sauce you have to ask for it lol they will change it for you
