TENDLI KI SABJI
Preparation time : 10 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
2 tbsp Oil (तेल)
½ tsp Mustard Seeds (सरसों के बीज)
½ tsp Cumin Seeds (जीरा)
1 inch Ginger - chopped (अदरक)
2-3 fresh Green Chillies - chopped (हरी मिर्च)
1 sprig Curry Leaves (कड़ी पत्ता)
2 heaped tbsp Peanuts (मूंगफली)
⅓ cup fresh Coconut - grated (ताजा कसा हुआ नारियल)
¼ tsp Asafoetida (हींग)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
½ tsp Turmeric Powder (हल्दी पाउडर)
¼ tsp Coriander Powder (धनिया पाउडर)
½ kg Ivy Gourd (Tendli) - sliced (टेंडली)
Salt to taste (नमक स्वादानुसार)
3 tbsp Coriander Leaves - chopped (धनिया पत्ता)
2 tbsp fresh Coconut - grated (ताजा कसा हुआ नारियल)
½ small Lemon Juice (नींबू का रस)
For Garnish
fresh Coriander Leaves (धनिया पत्ता)
fresh grated Coconut (ताजा कसा हुआ नारियल)
Process
In a kadai heat oil and add mustard seeds, cumin seeds, ginger, green chillies, curry leaves saute for half a minute.
Now add peanuts and saute for half a minute on medium heat and then add grated coconut and saute for a minute.
Then add the asafoetida, degi red chilli powder, turmeric powder, coriander powder and saute until fragrant.
Now add the ivy gourd (tendli), salt and mix everything properly then cover and cook for 5-7 minutes on medium heat.
Remove the lid and add coriander leaves, grated coconut, lemon juice and give it a final mix.
Serve hot in a serving plate and garnish with coriander leaves and fresh grated coconut.

I am surprised that people didn't like Kundru in their childhood... In Telangana, kundru fry is part of wedding/function buffet spread... And is quite sought after... Thank you for sharing such great recipe which is different than what we are used to.. will definitely try... Thank you!!

Jitni saari sabziyon ki naam liya gaya saare mere favourite the bachpan me. Tendli banane ka simple recipe hai aaloo (half size of French fry size) & kundru lacha type katke sarso ke tel me pyaaz & green chilly fry kar lo. Uske baad thoda haldi, salt, aaloo & kundru, then fry them 2minutes. Cover them till the aloo soften. Then uncover it & fry it gently till the water evaporate. Puri ke saath mast tasty lagta.

As you have lived in Bengali Tola, you must be aware that padwal & lauki are extremely loved vegetables amongst Bengali households with classic dishes like Lau chingri (Lauki prawns), Potoler Dorma & Lau er Kofta just to name a few. So Bengalis generally don't run away from these vegetables.

We also make tendlya bhutti. Cut tendli in roundels,apply salt keep aside. Chop onion . In a pan add 1/2 tsp oil add 1 tbsp coriander seeds and few methi seeds , red chillies fry till brown. Cool take 1/4 cup coconut gratings, fried ingredients, small piece of tamarind, a small piece of jaggery and salt .grind to smooth paste. Keep aside. In a pan add 1 tsp oil add mustard seeds n curry leaves add onion and tendli roundels,little haldi, stir fry till onions are light brown n tendli is almost cooked.add ground masala ,little water for gravy consistency. Mix and simmer for 5 minutes.

Being a South Indian l am used to having this vegetable since childhood with black channa as a combination instead of peanut. I love this vegetable n we grow it at my inlaws place. I will definitely try this recipe. It looks so tempting n flavourful.

Kudri, kachkola, sojne, sobjir data, aloo ye sab deke gota bhaja hota hain. Meri naani bohot achchha banati thi. I love this vegetable. Sorry don't know Hindi or English translation for all veggies. First book them, then fry them with masala

Ranbir brother With Vaal (Sprouted) called Valachya Dalimbya also tendli tastes awesome. Tendli popularly comes to Mumbai markets from Alibag. Like you said with Kala chana is awesome. We add the red chillies and whole spices which are homemade(receipe) and ground in the mill for the whole year use. Alibag is in Raigad district. The masala which can be bought from the stores there as well. It goes very well with fish in curries and fried fish as well. I’m sure you know all this but I thought I would share.

Hello Ranveer, thanks for sharing this wonderful dish. It brought me all the memories that I've shared with my father as he used to cook this dish every week. Also, in Andhra we add Beans instead of Turai and it tastes delicious as well. Do give it a try if yo haven't tried with Beans before😊

We call it "TINDORA" in gujrati and we use this as you told like salads and also we make it sabji with it and also thanks for the suggestion to use coconut 🥥 in it I'll try it sir lot's of love sir from jamnagar Gujarat ❤️

Great to see this recipe. I love native vegetables when they are sauteed in a simple tadka of mustard, urad dal, red Chilli and hing! This includes the dreaded cluster beans (gorikaayi in kannada), ivy gourd (dondekaayi) and snake gourd. The trick is to get fresh and tender veggies when they are in season. The flavors of native veggies shine when using simple home-style (and south-indian? Heheh) cooking techniques. Imho, the onion, tomato, ginger-garlic style "curry" and veg preparations involving "mass-appeal" veggies - carrots, beans, peas, potato, cauliflower, spinach have been done to death in Indian cooking shows.

There are so many ways to cook tendli...all taste different as well as good. 1) with coconut 2) with chana daal 3) with/without tomatoes 4) with dry powders.. like dhana jeera powder, salt, red chilli powder, amchur powder..

Nice, i make it with lots of garlic in the phodni, never tried only ginger, coconut...will try this next time. I do put roasted ground peanut towards the end though.

Looks yummy and tasty... 😋 We call it Dondakaya in Telugu.... This is made in different varieties ... One of my favourite dish if made in tasty, authentic and spicy.... Dondakaya fry is most preferred side dishes in vegetarian parties, marriages or gatherings in south....

Someone saying Tendli is not good is absolute blasphemy for me :-D . It is one of my favourite vegetables (although i am a non-vegetarian foodie), other than lady's-finger. Awesome !!!. Thanks for the new recipe.

Ranveer we make a simple tendli dish. Tendlya talasani. Just slightly crush tendlis with mortar. Add little salt n keep for few minutes.ln a pan add oil n add crushed garlic (with skin) ,broken red chillies, a tiny piece of jaggery. Sprinkle little water .n cook stirring till done

Maine kabhi kabhar try kri thi Tendli , yah soch k k acchi lag jai but kabhi lagi hi nahi acchi. Yah baat college k dino ki hai. Par tabhi yah nahi pta tha k aise bhi baan skti h Tindli . in origin am from Odisha and we called kunduri and its my one of fav vegetable from childhood, even my daughter also love this, now am in USA and this vegetable u can get any indian store so will try this recipe for sure, Ranveer you and your recipe is the main ingredients in my kitchen

Love it when you use everyday vegetables and phata phat make a subzi. We stir fry it with mustard green chillies salt and lemon juice and serve it as a salad or stuff it in roti for a quick snack.
