GAJAR KA HALWA / GAJRELA
Gajerela
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Pressure Cook
1 tbsp Ghee, घी
1 liter Milk, दूध
2 kg Winter Carrots, grated, गाजर
¼ tsp Saffron Strands
1 cup Sugar, चीनी
Toasted Nuts, भुने हुए मेवे
For Tossing Nuts
½ tbsp Ghee, घी
9-10 no. Almonds, chopped, बादाम
9-10 no. Cashew nuts, काजू
For Garnish
6-7 no. Pistachios, blanched & silver, , पिसता
Silver vrak, चांदी का वर्ख
Process
For Pressure Cook
Peel and cut the carrots in halves. Then grate the carrots and keep aside in a bowl.
Grease the bottom of the pressure cooker with some Ghee and pour milk into it. Heat the milk thoroughly.
Once the milk is heated, add grated carrots into it and mix well.
Close the lid and cook it till 1 cooker whistle.
Transfer it in a kadhai and reduce the mixture for 15 minutes.
Add Saffron Strands and Sugar once the mixture is completely reduced and cook it well.
Add toasted nuts into the mixture and mix well.
Garnish with sliced pistachios and silver foil.
Serve hot.
For Toasted Nuts
Finely chop almonds and cashew nuts. Keep aside for further use.
In a pan, add some Ghee and heat it well. Once the Ghee is heated, add chopped almonds and cashew nuts into it.
Saute the nuts and keep aside for further use.

Hats off to Ranveer Brar, the way he takes us through the journey of food.... I especially loved this episode as the chef was emotional when talking about bjee. Some memories are there for life.... you were hiding your emotions and i am sure your eyes became wet- that is what happens when you refresh your memories of your elders who were close to your heart and i am sure they will be happy looking at you sharing those memories and remembering them and they will be blessing you from whereever they are and i can say that is one of the reasons of your success that their blessings are always with you. keep it up. Honestly most people watch your videos not just for the recipes or the hisotry of cuisines and science behind the ingredients but also for your engaging conversations which brings back memories of the past .

dont use anythg but natural like real burra. not ordinary sugar which is powdered. thr is a big difference.

You remember someone close to you when u cook some dishes..like u remembered your biji.... I too remember my biji..she was always in jitchen cooking delicious food for us as we went there only once in a year during summer vacations when we went out to zoo she packed delicious aloo parathas with mango pickle. This was in delhi. We were small n didnt inderstand big things but now if she was alive wud want to ask her biji what would u like to do..where u want to go ...come we will take you for a trip..She had lovely sarees but never wore them...as she was always in kitchen have seen her in white cotton saree always ....god bless her

When you were dumping the halwa in kadhai.. aur jaise hi maine vo halwe ke Jaan .. matlab usake" रस्य" ko cooker ke bottom pe chipka hua dekha.. toh bola, are yaar, "iska asali rasya toh cooker ko chipaka hai, sirji vo nikal lo" aur agale pal apane meri mani aur gajrela ki jaan me jaan aa gayi 😂

Punjabi are really blessed hmari grandmothers ki memories khane ke sath jud jati hai jise hm taumar yad rkhte hai. I also remeber how my grandmother used to make makki ki roti and would add alot of ghee on it for me. Her smile is still at front of my eyes. Her panjiri was alwsys a cure to every health issue. Ranveer my mother is a bit choosy when it comes to a particular dish but when I made dhania chicken following your recipe I was sceptical about the taste of peanuts in that but it turned out really well and Maa loved it. Hello Chef, I wanted to share that I absolutely loved your recipe. I had very bad pregnancy craving for Gajar Halwa and was kind of in a bit of fence as I never made it before. So I looked up for your quick and easy recipe and tried it out. It turned out pretty amazing!!! I have never been so proud of myself.. Thank you so much for sharing this with us.. P.S: I did used those Orange carrots as I am in Boston and couldn't find red carrots immediately!! :D

यूं तो गाजर का हलवा हर सर्दी में बनाना और खाना हमारे लिए आवश्यक रूप से महत्वपूर्ण है लेकिन आज बनाने जा रही हूं बीजी की रेसिपी से गजरेला,,,,और हां अम्मा की याद ताजा हो गई भईया आपकी वजह से बचपन में वो हम सब बच्चो को लगा देती थी गाजर कद्दूकस करने जाड़े की धूप में और कहती जो गाजर घिसेगा उसे हलवा सबसे पहले मिलेगा,,आपकी वजह से अम्मा भी महक रही हैं रसोई में,,सही कहते हो आप जो खाना हस्ते खेलते बन जाए वो सबसे अच्छा❤️❤️

My grandmother used to prepare amazing pickles. I learnt how to make tomato pickle from her but dint get time to prepare as it requires sun drying. But I am sure one day I am gonna prepare what she taught.

Hey Ranveer I am Kashmiri and in our house gajerela was cooked as kheer and had rice in it. May be in punjabi household rice aren't added. I liked your comment about making Gajar halwa with orange gazar but you can't find red gajar in Turkey or other parts of Europe so we have no option but to cook halwa with orange gajar.

The main purpose of pressure cooker is to cook in steam.If u whistle the cooker the steam is released and wasted. As a chef u should be knowing this and avoid such wastage.. Whistle is just the indication that there is enough steam in the cooker. Guide the people for proper use of pressure cooker.
