Chef your videos are really heart warming. I have just one suggestion, instead of using saunf, kalanji, etc separately, we can also use something called "Panch Phoran". It will contain all these stuffs.

Panch poran has mustard seeds as well which is not really added in Banarasi kaddu so i think we must stick to just methi, saunf, kalonji and jeera.

Rocking RB! My mom cooks it in similar way and it always comes out amazing. The dish is all about counter balancing ingredients, it has every thing, bitterness, sweetness, salty, tangy. In short it can be summarized as a freshly made achaar or something like achari aaloo. A slight innovation, try using boiled sweet potato in the same dish. You may skip the gur part and if you have curry patta, it will come out amazing. All about masala magic!!! Keep more coming.

Nice recipe Even in Karnataka we cook this sweet pumpkin (we call it sihi kumbala Kai ,kumbala Kai means pumpkin,sihi means sweet ) , we add only mustard , urad dal ,channa dal , hing , curry leaves, chillies and this veggie, salt cook , grated coconut in the last .very simple recipe

Deeply thankful to you for this recipe. I'm not a great cook, and not a great fan of pumpkin. But when my daughter-in-law in Canada requested me to make the vrat wali kaddu ki sabzi, I froze at first and then turned to the ever- dependable Ranveer Brar to rescue me. Omg, this is our old time recipe @home. We r from UP and hamare yahaan kaddu, baledvin, aloo ki rase ki sabzi aur mooli ka bhajja har tyohar par banta hai. It's very proprietary menu of d UP baniyas. I m so glad u hv recreated it so perfectly. You must invite my mom for d baledvin recipe, she is d best and makes it hatth se thapak ke without belan. You will love it. Hi This is a very good and easy recipe. I make it very frequently. But I use dry red chili, hing and PANCH FORON (jeera+ kalongi+ methi+ fenal seed+ radhuni) as tarka. Then add onion. And rest of the recipe is same. PANCH FORON is combination of 5 spices (above mentioned). If don't hv radhuni, can use mustard seeds.

Tadke mein app ne pahle Jo dala usee hi Bengal mein panch foron kahte hain .. u know it.. we call it Kumror chokka.. it is best served with luchi . My mother add badam(peanut) flakes to it.. with a dash of ghee and Bengali garam masala powder...at the last ... Heaven ❤️❤️🙏🙏

I make this with a bit different phoran . Only methi and hing and green chillies as phoran. Rest all the process is same and cook it until smooth mashed paste . It tastes amazing
