RB STYLE RAJMA
Preparation time 10 minutes
Cooking time 30-35 minutes
Serve 2-4
Ingredients
For RB Style Rajma
2 tbsp Ghee, घी
2 tbsp Oil, तेल
2 no. Cloves, लौंग
7-8 no. Black peppercorns, काली मिर्च के दाने
3-4 no. Black cardamom, बड़ी इलायची
2 no. Green cardamom, हरी इलायची
2 no. Bay leaf, तेज पत्ता
2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
3 medium Onions, grated, प्याज
Salt to taste, नमक स्वादअनुसार
1 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें
1 ½ cups fresh Tomato puree, ताजा टमाटर की प्यूरी
2 tbsp Coriander powder, धनिया पाउडर
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 heaped tsp Turmeric powder, हल्दी पाउडर
½ tsp Cumin powder, जीरा पाउडर
2 cups Kidney beans (soaked overnight) भीगे हुए राजमा
2 heaped tbsp Ghee, घी
3-4 cups Water, पानी
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
4 no. Green chillies (less spicy & finely chopped) हरी मिर्च
2 inch Ginger (peeled & finely chopped) अदरक
¼ cup fresh Coriander leaves, finely chopped, धनिया पत्ता
¼ cup Water, पानी
Other Ingredients
½ tsp Oil
For Garnish
Coriander sprig, धनिया पत्ता
For RB Style Rajma
• In a pressure cooker, add ghee, oil, once it's hot, add cloves, black peppercorns, black cardamom, green cardamom, bay leaf and let it splutter well.
• Add green chillies, onions, salt to taste and saute it for 2-3 minutes until golden in color.
• Add tender coriander stems with roots, fresh tomato puree and cook it for a while.
• Add coriander powder, degi red chili powder, turmeric powder, cumin powder and cook it well.
• Add kidney beans, ghee and give it a good mix..
• Add water, cover it with a lid and cook it for 4-5 whistles or until cooked well on medium to high flames.
• Keep it aside to depressurise the cooker.
• Finish it with dry fenugreek leaves, green chillies, ginger, fresh coriander leaves, water to adjust the consistency and give it a quick boil.
• Transfer it to a serving dish and garnish it with coriander sprig.
• Serve hot with steam rice or roti.
