Mene ye masala bnaya But Without Mace, Black Cardamom, Stone Flower and I added ginger, garlic, Haldi And Citric acid Powder and added 1 tbsp Fennel seeds with masala in mixer buht Acha Masala Ban gya Thnks Bro

I am a new enterent into kitchen though late in life but I remember my parents used to make garam masala at home. At age 71 I am making cooking my hobby and realy thank you for making me enjoy this hobby. Great way of explaining things and I also very strongly believe that what ever line you choose your concepts should be clear. You are certainly one who tells only things which are clear in your mind. Great well done.

My father was a grt cook. I learnt my cooking frm him, wen i was oy 7 yrs old, i used to stand near him nd see him cooking, tab chulha hota tha. And i ve seen him grinding garam masala himself in mungli dasta.. Nd i can swear it was so much the way u did. Th q ranveer. U took me to d memory lane. 🙏❤️

Iam from Mumbai hence made the Garmi ke liye chai masala and everyone is loving it at home. The next of course is this Garam Masala. A teacher of mine always says in Marathi "jitke knowledge tumhi share karta ...titkech tumche swatahache knowlege vaadhate"... and this is a quality we observe in you... I just made it and it has such a good aroma that I am loving it. I made little changes as I can't take too much spices due to stomach issues but I still added little nutmeg ....just a pinch....lol and to balance it I added fennel. I hope my stomach remains calm lol..Thank you Ranveer for all these great ideas.

Chef Ranver this is the video I was looking for to know more about spices. The way you explained it you nailed it; what I was looking for. I am a chef in the British Army they love Indian dishes. The day we cook curry, rice and other Indian dish; it is the special day for every one which happens only ones a week. All the army in our Battalion looks for that day. I learned so much from this video. I knew a homemade garam masala was better (fresher) than a store-bought one but the explanation about layering properties of the spices and adding additional spice for a summer or winter spice blend was an amazing information

Back in the days people used to keep recipes as their family secrets. And they would take pride about it, when people used to talk about food prepared by them. Exactly. Our female ancestors must’ve gone through hell when they didn’t know certain recipes. In laws never shared the cooking procedures, let alone secrets. The newly wed lady had to come with much cooking knowledge and was still taunted that her mom taught her nothing. Thanks to KZbin, newlyweds are safe now. In fact many ladies are teaching new art and techniques of cooking to their in laws. In laws have become more accommodating now, their secret recipes are on social media now.

Perfumery has the same three notes concept when blending essential oils - Base Notes, Middle Notes, and Top Notes. The proportion and balance of these three notes is what perfumers use to incorporate into their composition. During the Mughal Times, the art of mixing ingredients in specific proportions (depending on the taseer, weather, and who it's made for) were cooked in a deg for a number of days to extract their essential oils in a base of Sandalwood - which then was used as an attar (perfume oil). However, what makes masala blending challenging is the source of ingredients which makes a drastic difference in the final product. I have tried to use ingredients from other countries while blending masala's, and the outcome has been very different due to changes in weather, soil, or a slightly different Latin name. The source of these ingredients and it's Latin name classification is equally important as the proportion. Thank you @ChefBrar for explaining and sharing the art of balancing these ingredients, but also where to source them from. A quick note though - the picture of the Cinnamon does not match its Latin name. Cinnamonum Verum is a slightly different product, and would probably use a tad bit more as it is much milder in strength. Superb informational video as always! :-)
