I am a new enterent into kitchen though late in life but I remember my parents used to make garam masala at home. At age 71 I am making cooking my hobby and realy thank you for making me enjoy this hobby. I just made it and it has such a good aroma that I am loving it. I made little changes as I can't take too much spices due to stomach issues but I still added little nutmeg ....just a pinch....lol and to balance it I added fennel. Exactly. Our female ancestors must’ve gone through hell when they didn’t know certain recipes. In laws never shared the cooking procedures, let alone secrets. The newly wed lady had to come with much cooking knowledge and was still taunted that her mom taught her nothing. Thanks to KZbin, newlyweds are safe now. In fact many ladies are teaching new art and techniques of cooking to their in laws. In laws have become more accommodating now, their secret recipes are on social media now.

Perfumery has the same three notes concept when blending essential oils - Base Notes, Middle Notes, and Top Notes. The proportion and balance of these three notes is what perfumers use to incorporate into their composition. During the Mughal Times, the art of mixing ingredients in specific proportions (depending on the taseer, weather, and who it's made for) were cooked in a deg for a number of days to extract their essential oils in a base of Sandalwood - which then was used as an attar (perfume oil). However, what makes masala blending challenging is the source of ingredients which makes a drastic difference in the final product. I have tried to use ingredients from other countries while blending masala's, and the outcome has been very different due to changes in weather, soil, or a slightly different Latin name. The source of these ingredients and it's Latin name classification is equally important as the proportion. Thank you @ChefBrar for explaining and sharing the art of balancing these ingredients, but also where to source them from. A quick note though - the picture of the Cinnamon does not match its Latin name. Cinnamonum Verum is a slightly different product, and would probably use a tad bit more as it is much milder in strength. Superb informational video as always! :-)
