LEMON RICE
Preparation time : 10 minutes
Cooking time : 15 minutes
Servings : 2
Ingredients
2 tbsp Sesame Oil (तिल का तेल)
1 tsp Mustard Seeds (सरसों के बीज)
1 tsp Whole Black Gram (गोटा उड़द)
1 tsp Chana Dal (चना दाल)
1 sprig Curry Leaves (कड़ी पत्ता)
2 Dry Red Chillies (सूखी लाल मिर्च)
2-3 fresh Green Chillies - slit in half (हरी मिर्च)
6-8 Cashew Nuts (काजू)
8-10 Peanuts (मूंगफली)
1 tsp Turmeric Powder (हल्दी पाउडर)
Salt to taste (नमक स्वादानुसार)
1 medium Lemon Juice (नींबू का रस)
2 cups Kolum Rice (कोलम चावल)
4-5 Curry Leaves (कड़ी पत्ता)
A pinch Salt (नमक)
Process
In a kadai heat sesame oil and add mustard seeds, whole black gram, chana dal and let it get nutty brown.
Now add curry leaves, dry red chillies, green chillies, saute for a minute.
Then add cashew nuts, peanuts, and saute until light golden brown.
Switch off the flames and add turmeric powder, salt, lemon juice and then toss in the rice.
Switch the flames back on and sprinkle some water on the rice, cover and cook for 2-3 minutes.
Remove the lid and crushed minutes of curry leaves and salt, mix it properly and serve warm.

I'm a South Indian , 15 year old . Considering the fact that this recipe is simple , quick and ingredients are minimal and sorted, while lunches I always make it myself on regular basis when sambar seems bored . 'Chitranna' is what we call . Again this simple recipe has diversifications as well. Even itself in karnataka here, northen part ppl add their touch of garlics, onions , peanuts , a sprinkle of coriander . While when we dine the same down in South, we get shredded coconuts along. Siding this dish with a bowl of rich curd is complementing and appetizing as well. Loved it chef ....

As an Iyengar, I believe you did your research well. Between 1955 and 1960 we used to travel between Trichy and Madras in a Vauxhall. We had a tiffin carrier with puliyodharai and lemon rice with appalam and avakkai oorkai (pickles in red chillies). My grandad would park the on the side of the road and we would sit - all adults and as many kids that could be packed in a car. Lovely memories. Ranveer we finished it off with Iyengar thayir sadam. Do write about it :)

Wonderful. Loved the colour. We extract juice of lemon, add required salt, turmeric and just about half a teaspoon of sugar (just to balance the sharp sour taste of the lemons, only chillies and. salt won't suffice for this) to it and mix it till the salt and sugar dissolve. We also add a little ginger (finely chopped) and of course Asafoetida to the tadka. After the basic seasoning is done (just as he has shown it here), finally we add the lemon juice mixture and switch off the flame in just. a couple of seconds. This is immediately transferred to the rice (we don't add rice to the same pan) and. mixed well. Finally we add finely chopped coriander, cover the vessel and let it rest for a while. The best dish that go well with this is spicy potato fry /roast (prepared the Tamilian style not the deep fry) or colocasia fry,/shallow roast raw banana stir fry/roast babsically anything that will balance the sourness with a sort of starchy spice taste in the mouth. Most of us Tamilians don't like the sweetness of the coconut based dishes for this. PS - Before anyone blasts me for commenting with suggestion on RB's video, my disclaimer - I am a Tamilian, cooking this dish every week for the last 20+ years, learned it from my mom and grandmothers .

@@JattJatt8 it is a resin from a tree or like a gum. Afghanistan and Iran have the top quality of hing but I don't know if they use it in their food.

It was Sunday. I was wondering some delicious home made food but different. Then I met this beautiful video that forced me to cook for my family. What is gota urad and are the dal boiled before use? Is it not too hard.

@@gurjitsingh4268 Urad dal is basically a black coloured round shaped gram. Ghota urad means peesa hua urad. After Which it will become 2 parts of urad daal which is white in colour. And no, the daal is not boiled, since it’s sautéed in oil , it’ll become crunchy like fried channa😇

Hi Chef RB. I used to have it when one of my collegues, hailed from TN, brought it into the office. We used to savour it like anything. He did tell me the recipe, however, for an unknown reason I never tried cooking it...as I too thought it to be a difficult job. But, after watching your video today, now I'm confident to cook it. Hello Chef, I'm truly honored with this recipe as I'm a South Indian from Mysore. Thank you so much for this recipe as its every southindian home's favourite and staple dish. But every home has its own version of this lemon rice! Like you always say... The monopoly of this dish is it's tempering. The oil we use and the ingredients make a huge difference... But this is the very standard recipe! Just love the way you cooked it!

Am a mysorean too.. The only variation is we use groundnut oil, hing, copra/grated coconut and dhaniya leaves .. Everything else is same..

I love the one that specifically has onion pieces that is slightly soft. I ate that in a small town in Karnataka and i still think about that chitranna.

Ranveer ji, I watched this video out of curiosity. I am from Mysore but living in USA. I make this often as white Americans are comfortable eating this and they relate to Mexican lime cilantro rice. Our lemon rice is different because of the tadka. I like hing/ asafoetida, hence I add it to the tadka. Over time I have started adding peas, colored sweet peppers etc to make it more colorful. A garnish of cilantro/ coriander leaves adds to the color and freshness. Thank you for a wonderful video presentation.

I always squeeze lemon juice over the rice after the seasoning is mixed well. I also add coriander leaves , they add awesome flavor to lemon rice.

Love u RB, this is our kannadigas favorite recipe n we call this as CHITHRANNA in kannada. And one more thing u forgot to add ur favorite Dhaniya as we south Indians usually add to this. U know RB, today we have varamahalakshmi festival, i did chithranna for breakfast as we dont use onion or garlic today.
