DHOKA'R DALNA/ DAL DHOKA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Paste
2 cups Urad dal, soaked overnight, उड़द की दाल
1 cup Chana dal, soaked overnight, चना दाल
1 ½ inch Ginger (peeled & sliced) अदरक
3 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of asafoetida, हींग
⅓ cup fresh Coriander leaves, roughly chopped, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
For Cooking Dal
2-3 tbsp Ghee, घी
A pinch of asafoetida, हींग
1 no. Green chili (less spicy & cut into diagonally) हरी मिर्च
½ inch Ginger (peeled & roughly chopped) अदरक
1 ½ cups Chana dal, soaked overnight, चना दाल
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
3-4 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
For Frying Dal Dhoka
Oil for frying, तलने के लिए तेल
1 cup Mustard oil, सरसों का तेल
For Tadka
2 tbsp Oil, तेल
A pinch of asafoetida, हींग
1 inch Ginger (peeled & finely chopped) अदरक
2 no. Green chillies (less spicy & cut into diagonally) हरी मिर्च
1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp dry Mango powder, आमचूर पाउडर
1 cup Water, पानी
2 tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
For Dal Dhoka
Cooked dal, पकी हुई दाल
Prepared tadka, तैयार किया हुआ तड़का
Salt to taste, नमक स्वादअनुसार
2-3 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
Fried dal vadi, तली हुई दाल की वड़ियाँ
1 tsp Lemon juice, नींबू का रस
Other Ingredients
Oil (for greasing) तेल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Paste
● In a bowl, add soaked urad dal, soaked chana dal, ginger, green chillies, degi red chili powder, turmeric powder, a pinch of asafoetida, fresh coriander leaves and salt to taste.
● Transfer it to a mixer grinder jar and grind it into a smooth paste.
● Keep it aside for further use.
For Cooking Dal
● In a pressure cooker, add ghee, once it's hot, add a pinch of asafoetida, green chili, ginger and saute it for a minute.
● Add chana dal, salt to taste, turmeric powder, water, salt to taste and mix it well.
● Cover it with a lid and give it 2-3 whistles on medium to high flames.
● Turn off the flames and leave it aside to depressurise the cooker.
● Mash the dal with the help of a wooden spoon or masher and keep it aside for further use.
For Steaming Dal Vadi
● Take steaming plates, grease it with some oil, pour a ladleful of prepared paste and spread it evenly.
● Transfer it to a steamer and cook it for 15-20 minutes on medium flames.
● Leave it aside to cool down the temperature.
● Demold the prepared Dal vadi and cut into a desired shape.
● Keep it aside for further use.
For Frying Dal Dhoka
● In a non-stick kadai, add oil, mustard oil, once it's smoky hot, add prepared dal vadi and fry them until golden brown.
● Transfer it to an absorbent paper and keep it aside for further use.
For Tadka
● In a pan, add oil, once it's hot, add ginger, green chillies, degi red chili powder, dry mango powder and saute it for a minute.
● Add water, sugar, salt to taste and give it a quick boil.
● Keep it aside for further use.
For Dal Dhoka
● In the same pressure cooker, add cooked dal and give it a quick boil.
● Add prepared tadka, salt to taste, fresh coriander leaves, fried vadi and let it boil for 5-6 minutes.
● Finish it with lemon juice and give it a good stir.
● Transfer it to a serving dish or bowl and garnish it with coriander sprig.
● Serve hot with steam rice.

We bengalis usually make it with chana dal only and we do not steam it... we shallow fry the batter till it's dry and then let it set, cut and deep fry...And our gravy is not dal based...we usually make it will alu, tamatar, adrak, grated coconut and normal spices and the dhoka cooks in it...steaming looks way more convenient... I will definitely try this one out ..

Being a bengali and a huge fan of yours , I would like to mention 2 points....dhoka is never steamed , the mix is sauted in oil and given shape and then deep fried. Second , 'dalna' is a specific type of gravy , you may put potato in it....dal is never used in this....the gravy made up of ginger and tomato with other spices.

My mom always used to steam dhoka, that's how I have had it all my life. Dhoka is made differently in East Bengal and West Bengal cuisines. I totally agree on the daal aspect, the gravy is always made as a gravy and not in daal

Two important things being a bengali myself: 1.Dhoka is never steamed like dhokla, the batter is dried up in kadhai and then the dry batter is shaped manually to form a cake, which is then cut into pieces. 2.When you call dalna it's a specific type of gravy with no chana dal in it. When the dhoka itself is made of chana dal why would we overload it in gravy also!! Dalna gravy means simple tomato and ginger with jeera ka tadka.

In Gujrat we have similar recipe called "Dhokli nu shaak " made in butter milk for sour flavour. And Dal dholki also with Toor dal.

It's a totally different recipe of Bengali's Dhoka'r Dalna. We only make it from Channa dal and we never steam it. Danla is made of with potato and simple masala. .... finish it with ghee and garam masala. Dear chef Thank you so much for sharing " Dal dhoka' recipe with us.... Sir ma durgapur West Bengal sa hu. Mare maa bohot he acha banate tha. Maa matar ki dal or chana ka dal sa karti thi. Or Bengali ma dalna matalab sabji hota hai jo maa aloo or dhokar dalna karti thi. Bohot miss kar ta hu maa ko sir. aj apka dhokar dalna dakh kar bohot bohot emotional ho giya sir.....2022 sa ea sabji wo test nahi mila sir.....

Try this with govindo vog chawal or khichdi, and don't forget the dhoka bhaja. Try some vaja also. Sir g please try mochar chop and alur chop in the next recipe 🎉. Golbarir manghsho and luchi cholar dal.
