Salted Caramel Cassava Cake😋😋
Salted Caramel toppings:
250g sugar
1 can evap any brand
2 can condensed milk any brand
5 eggyolks
2tbsp corn starch
2tbsp all purpose cream
1/2c hot water
1/2 c unsalted butter
1 1/2tsp salt
Grated cheese(optional)
Heat the pan then add the sugar and salt gradually, then wait to melt and amber in color.
Add the hot water to the caramel and then the butter.
In a separate bowl add the condensed milk, corn starch, evap and the cream mix until we'll incorporated(sift it) . Add this mixture to the caramel then mix continously until slightly thick .
Set aside.
For the cassava cake
1kg yellow finely grated fresh cassava
400g white sugar
1/8 tsp salt
800g thin coconut milk(pangalwang piga)
1/4 c melted unsalted butter
1 can evap.
Mix well until incorporated. For more fine texture you can use blender.
Baked the cassava cake into any pan of your choice lined with aluminum foil.
Baked at 350F. Until done.
Add the caramel toppings then bake again for another 30mts or until lightly brown.
Let it cool overnight. Before slice.
