1 kg pork menudo cut
1 tbsp. calamansi juice (to marinate the pork)
2-3 tbsps. soy sauce (to marinate the pork)
2 tbsps. minced garlic
1 onion, sliced
4 pcs tomatoes, sliced
2 tbsps. tomato paste
1 cup tomato sauce
½ cup banana catsup
Water, as needed
Sugar, salt, black pepper, as needed
Soy sauce, as needed
2 pcs carrots, cut into cubes
3-4 pcs red bell peppers, cut into cubes
3-4 pcs potatoes, cut into cubes
6-8 pcs hotdogs, sliced

Chef i was assigned to cook menudo for the vip's not to mention some of the politicians who will visit our place...and our committee assigned this menu...i did not have any second thought accepting this challenge because i never tried cooking that recipe all my life because i am not a meaty sauce lover but with full confidence i said yes because i know u will teach me...and the result....success...delizioso!! I appreciate your explanation in regards to why you do such action or why it’s best to do such a thing.
